Today I will be making a tiger nut (cyperus esculentus) and yoghurt drink; it sounds yummy, right? That’s what I thought as well, so let’s get into the details to see how I made the sweet and delicious weekend drink.
Ingredients are:
500ml of yogurt
50g of tiger nut
20g of date

As you all can see, the ingredients are few and affordable as well, but trust me when I say the outcome will shock you because it is very healthy, sweet, and good for consumption.
The first thing I did was to parboil the date because I bought the dry one, and I needed it to be soft so that I could blend it.So I added one cup of water into a pot, then poured the date into it and put it on the burner while I continued with some other things.
I rinse the tiger nut very well to avoid sand getting into my drink since I bought it dry, and then I packed them into the blender; I added a cup of water for blending.

I blended it for 20 minutes because the tiger nuts are hard, and I wanted to make sure everything was blended. I placed a sieve on a clean bowl, then poured the blended tiger nuts and made use of a spoon to stir it until I got the shaft out.

I poured the tiger nut juice back in the blender and then moved on to opening the date because it was soft already. I separated the seeds and then poured the soft part into the blender.

I added the yogurt to the mixture as well, and lastly, I poured ice cubes into the blender to make the drink chilled for consumption right after blending.

I poured it into a clean disposable cup after blending everything together, and now my tiger nut yogurt drink is ready.
