My cravings for greens have rocketed recently, so whenever I pass by the aisles in the supermarket, I scrutinise the salad section and pick up a bag of fresh salad with a long expiration date.
This way, the pack of salad lasts me 3 to 5 days fresh in my refrigerator, and I quickly add a portion to whatever meal I'm having.
One of my favourite salads is Rocket.
I like the fiery, sharp taste, which adds an oomph to my bite, and it complements my strong black coffee.
Also, there's a psychologically rewarding feeling of eating greens first thing in the morning that fires up my energy and enhances the pleasure that I get from drinking my cup of coffee.
I've always had my rocket leaves mixed with some balsamic vinegar, lemon juice, and chilli flakes and poured all over.
However, from just listening to the cravings of my body, I discovered this delightful morning meal—rocket leaves, 2 firm fried eggs, on a slice of sourdough bread, with a spread of Dijon mustard.

I never would have thought rocket and eggs would taste so good, and the bonus is that this meal concoction is so satisfying that I reduced the amount of bread to one round, which makes me feel less bulky.
With hints of spring in the air and these exciting meal ideas with fresh salad, I think I'll sow some seeds and get a little herb garden going at the bow of my boat.
I've noticed that my body craves the vitamins and minerals that it needs, and I struggle to absorb nutrients naturally. So, with a little boost from increasing the portion of my diet along with some supplements that I take, I can foresee an overall improvement in my skin and well-being.
Overall, I'm pleased with my little efforts to try to eat healthier because I'm a meat lover who finds bacon irresistible. Still, with sunnier days on the horizon, salads add a light freshness to meals, and salads are an inexpensive ingredient that helps boost the immune system.
