El campo despierta con el canto del gallo, las mañanas son bastante frías a pesar del clima árido de la zona, sin embargo el compromiso, la esperanza de una nueva oportunidad de salir adelante, la gratitud de un nuevo amanecer es el motivo para que cada campesino de mi pueblo se levante de su "hamaca" con la mejor de las actitudes.

Lo primero es encender el fogón, el cual pondrá a temperatura ideal el primer trago de café del día luego del aseo personal. Este Café es especial, pues se endulza con "melao", un derivado directo del jugo de la caña de azúcar. No puede faltar en ninguna cocina, es la fuente principal de ingresos del campo y todos los días se invierten grandes cantidades de horas para sembrar la caña, cosechar, procesarla y convertirla en dos productos esenciales, la panela y el papelón de caña de azúcar, para luego comercializar en las ciudades mas cercanas.

The countryside wakes up with the crowing of the rooster, the mornings are quite cold despite the arid climate of the area, however the commitment, the hope of a new opportunity to move forward, the gratitude of a new dawn is the reason for each farmer in my town to get up from his "hammock" with the best of attitudes.

The first thing to do is to light the stove, which will bring the first cup of coffee of the day to the ideal temperature after personal cleanliness. This coffee is special because it is sweetened with "melao", a direct derivative of sugar cane juice. It is the main source of income in the countryside and every day great amounts of hours are invested in planting the sugar cane, harvesting, processing and converting it into two essential products, panela and papelón de caña de azúcar, which are then marketed in the nearby cities.

La máquina que se encarga de todo esto se llama "Trapiche", se utiliza para moler la caña, obtener el jugo que luego a través de unos canales se deposita en una serie de pailas donde se hierve a altas temperaturas para así obtener el producto final, bien sea melao, papelón o panela.

The machine that is in charge of all this is called "Trapiche", it is used to grind the sugar cane, obtain the juice that is then deposited through channels in a series of kettles where it is boiled at high temperatures to obtain the final product, either molasses, papier-mâché or panela.

Realmente estas líneas dicen poco, es un trabajo duro que es realizado por un equipo de 20 personas aproximadamente solo ahí en el proceso final, sin contar los que están en las tierras atendiendo los sembradíos y todo lo que se refiere a la parte administrativa. Todo sujeto a la capacidad del trapiche.

Actually these lines say little, it is a hard work that is performed by a team of approximately 20 people only there in the final process, without counting those who are on the land taking care of the crops and everything that refers to the administrative part. Ir a Campo Alegre y no visitar el trapiche es como no haber ido, endulzar el corazón con ese melao es genial, es el fruto y la esencia de todos los ancestros que han pasado por estas duras labores sin emitir queja alguna. Definitivamente es llenarse de todo esa tenacidad, resistencia y espíritu de lucha que no ha sido doblegada por ninguna razón del mundo.

Going to Campo Alegre and not visiting the trapiche is like not having gone, sweetening the heart with that melao is great, it is the fruit and the essence of all the ancestors who have gone through this hard work without any complaint. It is definitely to be filled with all that tenacity, resistance and fighting spirit that has not been bent by any reason in the world.

El trapiche generalmente esta apagado cuando los que vivimos en la ciudad vamos de visita, pues son temporadas festivas y demás. Pero siempre quedan algunas labores pendientes, en este caso fuimos para terminar de empacar unas panelas que habían quedado sin organizar. Es un honor poder colaborar, sumar y hacernos parte de esto aunque sea algo minúsculo.

The trapiche is usually off when those of us who live in the city go to visit, since it is the holiday season and so on. But there are always some pending tasks, in this case we went to finish packing some panelas that had been left unorganized. Los niños se distrajeron bastante en la hacienda, los paisajes, los animales, la libertad que implica los grandes espacios de terreno sin límite alguno. Sin embargo, a veces cuesta un poco despegarlos del teléfono.
