A specific dish from my culture

Eba made with cassava flakes and egusi made with melon is a beloved cuisine in Nigeria. Almost every tribe in Nigeria loves this particular delicacy. My passion for this food is second to none as a Yoruba tribe in Nigeria.

Eba is a thick, starchy paste made from cassava flour typically served with soups or stews. Egusi soup is a flavorful and nutritious soup made with ground melon seeds (egusi), vegetables, and meat or fish. This combination is a match made in heaven! You can bite your hand while eating itπŸ‘Œ

Why I selected this particular dish and what is its significance.

This dish is known for its different significance and here are some πŸ‘‡

  • Cultural significance: This dish is a special delicacy in Yoruba cuisine, often served at special occasions and gatherings. It can be served with any type of swallowed meal like Amala(Yam flour), fufu(Cassava flour), Iyan(pounded yam), Rice, Yam, etc.

  • Nutritional value: Egusi seeds are rich in protein, vitamins, and minerals, making this dish a healthy and balanced diet option.

  • Flavor attributes: The combination of Eba's neutral taste and Egusi soup's rich, slightly bitter flavor creates a delightful harmony.

  • Personal connection: This dish reminds me of warm moments with family and friends, sharing stories and laughter over a delicious meal. My mom loves cooking this meal for us whenever we gather for any celebration.

Recipe

  Ingredients:
  • Cassava flour (garri)
  • Egusi seeds (grounded)
  • Water
  • Palm oil
  • Onion
  • Garlic (small quantity)
  • Vegetables (pumpkin, spinach, bitter leaves, etc.)
  • Any protein of your choice (chicken, beef, or fish)
  • Ponmo
  • Crayfish and locust beans
  • Salt and pepper, and seasoning to taste

Preparation:

Cassava flakes

  • Boil your water till boiling point
  • Pour it into a bowl
  • Add garlic(cassava flakes) and turn
  • Turn it with a stirrer until it is smooth without lumps
  • Scoop and wrap in a nylon
How to make the Egusi soup:

Egusi seeds

  1. Grind Egusi seeds into a fine powder.
  2. Heat oil in a pot,
  3. Add chopped onion and garlic,
  4. Mix grounded egusi with meat stock Stir well to form a batter
  5. Scoop the egusi in little quantities into the oil on the fire
  6. Add pepper and let it cook
  7. Cover and let it simmer for 5 minutes
  8. Open and turn, don't let it burn
  9. Add all the proteins
  10. Add your seasoning and a little salt
  11. Cover for 2minutes
  12. Add vegetables and allow it to cook for some minutes not to overcook on low heat

Serve Eba with Egusi soup while it's hot and enjoy!
