A not so spectacular start to the day (and yesterday's tasty supper)

As a rule, I'm not a great sleeper and although going to bed later than usual (22:35 - I'm on my holidays after all!), I was awake shortly after 4am. I poked my head out the window and the sky was semi clear so I thought I'd head to the beach and catch the sunrise which was due at 5:25. I grabbed the camera, whacked on the walking boots and jumped in the car.

I got to the beach around 5am and thought I'd have a tinker with the camera for 20 mins before the sun was due to break the horizon. There was a small issues, I'd forgotten to check the SD card was installed and ... well it wasn't. So I took a slow walk south along the beach to kill some time. Unfortunately nature was also against me as there was a decent amount of cloud by this time!

So, just a few snaps of a cloudy and rather unspectacular sunrise.

There was also a rig which looked to be just beyond the wind farm. A little investigation identified it as Wavewalker 1, an 8 legged dredging platform.

All in all, not quite the photo expedition I was expecting!

Supper last night was a delicious veggie option which was a remake of a Hello Fresh meal. It was a lentil and mushroom Welsh rarebit pie which is a nice budget meal with the ingredients costing around £4. The recipe is for 2 but we'll get a light lunch for two out of it too. The lentil and mushroom mixture really packs a punch.

Yeah, a bit of a rookie mistake that. Annoyingly I started tidying the study yesterday and consciously popped it in my desk drawer to keep it safe.

I think those skies are beautiful!

The rarebit looks good, too. Care to share the recipe? I have something leftover in the fridge that needs re-vitalising. Or I might just make corned beef hash :D

450g(ish) of potatoes cooked and mashed with a little butter (if you like).

For the filling, fry 150g of mushrooms fried until golden, add 15g of Worcestershire sauce until it evaporates. Add two cloves of crushed/grated garlic with a few finely chopped sundried tomatoes (you don't need to use them but I think they're great) and fry for around a minute. Then around 75ml water with 200g (ish) of passata and a tin of green lentils (I drain and rinse), season and cook down until thickened. I add one of the jelly red wine stock things you can get ... again adds more flavour, but season after adding that.

I cook the above for about 10 mins and add a dash more passata/water if it dries out early.

Once reduced add the base into a bake proof dish, add the mash on top.

The topping is around 150g of sour cream, 40g of cheddar and a tsp of Dejon mustard. Mix together and then spread over the mash. 20 mins in the oven at around 220c.

Corn beef bash is something I've not had in years! That's going on my shopping list for next week!

The rarebit sounds really nice, I must try that topping.

I'd not had corned beef hash for years then it pops up as the darts night supper at a local club. I'd forgotten how good it was! Always have it with frozen peas, not sure why, they just seem "to go" with it. Easy to make from the store cupboard, too, with a potato or two and an onion.
