A light lunch

The last few days were full of delicious food, a lot of meat and desserts, so we definitely needed a break from all that.

A simple, yet healthy option is eggs not exactly fried, not poached, somehow boiled. We love them that way, cooked in a little water, with olive oil and lemon juice. Once the water starts boiling, I add the oil and lemon juice and then the eggs. I put the lid on the pot, lower the temperature and let them cook for 6-7 minutes.

I then serve with some salt and pepper. I have also tried them with butter instead of olive oil, but I didn't like them as much.

A colorful salad with tomato, cucumber, olives, pickled peppers and of course oregano, olive oil and balsamic vinegar!

Feta cheese in the... toaster!! Yes, yes! I cooked this piece of cheese in the sandwich toaster. I folded a piece of baking paper in half and placed in on the toaster plates, put the cheese in the middle and let it cook for a few minutes. The juices from the cheese remained on the paper, saving me from the extra fuss of cleaning dirty toaster plates! I served hot with a little olive oil and oregano. If you like feta cheese and you have a sandwich toaster, then you should try it that way.

And some toasted bread. I seldom throw food away, even stale bread. Leftover bread is great toasted, even better than the fresh one.

Now, what should I cook tomorrow...?

Yes, plain or with some butter, jam or praline spread or whatever... toasted bread has so much potential!

This is exactly what one needs for lunch to keep oneself going. Looks delicious 😊❤️

These are great meal ideas, @ruth-girl. The poached eggs with olive oil and lemon juice. That looks really appetizing, easy to prepare and nutritious. Also, gentle on the tummy. And the feta cheese... also gentle on the tummy and tasty.
