These days are sooo hot and cool light meals are a must if you want to cope with the heat.
A cool light meal like this one!! With pasta, a rich salad and some soda water with lots of ice in!
My salad was a mixture of any veggies I could find in the fridge: mixed greens, tomato, cucumber, red pepper, green pepper, scallions, feta cheese and kefalotyri cheese. For the sauce I used a little mustard, a little light mayo, a few spoons of milk, oil, lemon juice, I used my coffee mixer to mix them up, poured over the vegetables, I seasoned with oregano and thyme and what you see in the photo was the final result.
For the pasta dish I didn't do anything too complicated either. I boiled a packet of farfalle and once done, I strained the extra water and in the same pot I chauteed some fine sliced fresh mushrooms seasoned with black pepper, garlic powder, mustard and thyme. I finished with a little white wine and when the alcohol was gone, I added a can of condense milk (instead of cream) and let my sauce boil for no more than a couple of minutes. Then, I added the pasta, gave all my ingredients a good stir and removed from the burning kitchen. A few spoons of grated kefalotyri on top and a quick, all-time favorite pasta dish was ready in less than 20'.
