Creamy mushroom casserole with fresh potatoes

Estonian nature is wonderful, especially in the summer, a short walk in the forest and 5 liters of chanterelles in a beautiful basket.
Hurry home to clean the mushrooms. A walk in the forest today decided that for lunch we have creamy mushroom casserole with fresh potatoes. Of course, there were too many for one casserole dish. Most of them were nicely fried with salt for the winter, put in jars in good portions and stored in the freezer.

PREPARATION:

It takes about 1 hour - for two people

  1. Peel medium-sized potatoes and boil 2 teaspoons of salted water.

  2. Clean about 200-300 grams of mushrooms and cut them into smaller pieces.

  3. Put the pan and fry the water, add salt

  4. When the water is fried, add chopped pieces of bacon (chopped bacon 200 grams

  5. Fry everything nicely with extra pepper

  6. Take a normal 200 ML drinking glass and fill it with water

  7. Dissolve 1 tablespoon of wheat flour in cold water

  8. Put 100 ml of coffee cream/food cream in another container
    When the mushrooms and bacon are nicely fried together, add the cream and immediately a glass of water in which the flour has been mixed beforehand (this way there are no lumps of flour).

  9. Heat the pan over low heat until the liquid starts to thicken - stir at the same time

  10. Let the entire dish in the pan boil once and remove from the stove

  11. Add more salt and pepper to taste if needed.

NB! add salt and pepper, especially Chilli pepper, according to your taste. Rather, less in the base always adds up. At the same time, the potatoes are already almost soft. Drain the water from the potatoes and let them steam a little.

SERVING:

Use everything nice that you have: tomato, cucumber, strawberries, dill, green peas.

FOR VEGANS:

For example, you can use onion instead of bacon & soy milk or coconut milk instead of cream.
NB. Instead of chanterelles, you can also use other tasty mushrooms. for example champignons

This time the mushroom stew was very tasty and a cup of coffee was well deserved for dessert. Making this food cost me about 3 euros, but the ingredients are priced differently in each country. Here in the north, food is very expensive, and a 3-euro lunch for two is extremely affordable in our circumstances.

The RECIPE ingredients are as follows:

  • 10 medium-sized potatoes
  • Salt
Mushroom cake
  • 200-300 g of mushrooms Chanterelle mushrooms or champignons
  • 200 grams of bacon
  • 1dl/100 milliliters of food cream/coffee cream
  • 3dl/ 200 milliliters of water
  • 1 tablespoon of wheat flour
  • Salt
  • Pepper/ Chilli pepper
Salad
  • Tomato 1 pc
  • A little cucumber
  • Strawberries 2 pcs
  • 2 pods of beans
  • Salt
