Hi guys, it's another Sunday of creativity and I'm happy to join again. I'm a foodie and I love trying new recipes. As far as it's something I'm trying for the first time, it's a new recipe on my path.
I will be sharing how I prepared my spring onion jollof rice. The Nigerian jollof rice comes with another form of flavor when there is a touch of spring onion on it.
Below are the ingredients used:
Rice
Tomato mixed
Red pepper and Cayenne pepper
Onion
Chopped spring onions
Oil
Cube
Salt
Cooking process
I started by preparing my ingredients. I parboiled my rice to remove excessive starch.
I chopped my onions, spring onions, and blended my pepper. Once all these are ready, next is to start the sauce.
I heated my groundnut oil. As it got hot, I added my onion and fried it for a few seconds.
Followed by my blended pepper mixture which I allowed to fry on a low heat for 2 minutes. After which I added my tomato mix.
A little about this powdered tomato is that it doesn't look reddish in the sachet but when mixed with water it becomes red. I love frying mine together with my oil instead of mixing it with water without frying.
I added the a little of the spring onion to the mixture and fried on a low heat for seconds. I fry all the mixture together with continuous stirring to avoid it burning. After all is well fried, I added all my seasoning ingredients. I didn't use meat, I mixed my crayfish, seasoning cubes, and curry together.
Then, I covered the pot and allowed the water to boil. Then I poured in the washed rice and cooked. Avoid turning the food to avoid burning. Allow it to cook and once it boils, sprinkle the spring onion on top. If you want it crunchy, allow the rice to be almost done with little water remaining before sprinkling the onion.
The spring onion does not just make the food colourful, it gives the rice another nice taste.
