Ablaze's Fried cheese on a bed of seasonal vegetables
Look it, I'd be the first to admit that Veganism and Vegetarianism is not for me and it doesn't float my boat, but I'd be willing to eat less meat and more fish if it helps our planet.
This meal has nothing to do with that good intent however. Rather this meal was born out of necessity! We were faced with a dilemma, a whopper of a dilemma. I was on dinner duty and when I opened the fridge, the sight would bring tears to manys a man's eyes. It was quite horific actually. It's quite likely I'll get PTS later. Yes, you guessed it, there was no meat. Nil. Nada. Zip. Lots and lots of vegetables, but no meat to be seen.
So what's a man to do? A visit to the shop? Nah, feck that. Takeaway? Hmmmmm.... tempting, but no, we try to limit those to occasional treats. Then it hit me, I'd have to make a vegetarian dinner. For the love of all things holy!
Well do you know what? It was fecking lovely and my wife and I thoroughly enjoyed it, so much so that it inspired this post. So without further ado. Introducing......
Ablaze's Fried Halloumi Cheese on a bed of seasonal vegetables and Spaghetti
Thumb sized piece of fresh ginger
1 fresh chilli (red or green)
1 medium sized onion
1 yellow pepper
A few Mushrooms
A few cherry tomatoes
Tin of kidney beans
Tin of chopped tomatoes
STEP 1: Take your thumb sized piece of ginger and chop finely.
STEP 2: chop all of your veg and fry on a low heat with a lug of olive oil. Add the peppers first, simmer for 2 minutes, then add the onion, simmer for 2 more minutes and then add the mushrooms and simmer for 2 additional minutes.
STEP 3: Mix everything as per below and add your cherry tomatoes and simmer.
STEP 4: Now is a good time to get your Spaghetti on.
STEP 5: Time now to grill, barbecue or fry your Halloumi. I fried mine. Chop it first.
Then throw it on the pan.
STEP 6: Fry it on both sides and spon it will be looking very appetising.
STEP 7: Add your chopped tomatoes and rinsed kidney beans to the other pan and continue to simmer.
STEP 8: The next step is essential for any decent pasta dish in my humble opinion. Take some sauce, like 4 table spoons or more and mix it in with your drained and cooked pasta. Mix if all around.
STEP 9: Serve your pasta into some suitable bowls or plates.
STEP 10: Now add the medley of seasonal vegetables.
STEP 11: Now our Halloumi cheese should be just right, top of the dish with a few pieces of nicely browned Halloumi.
