Ablaze's Healthy Greens and Poached Eggs Salad
So herself always gets twenty eggs with the weekly shop and sure isn’t that great. You can't beat eggs. Ok, you can beat eggs.... But eggs are great is what I'm trying to say.
To allow a sports analogy, they are the utility player. They go with so many different dishes. Breakfast works with scrambled, poaches or fried eggs. Hard boiled eggs in salads. Eggs on pizzas. A fried egg atop a burger. Then you have baking and even those you drink them for bodybuilding. So there you have it, eggs can play anywhere on the plate.
So this week's Foodie post and my dish is based on eggs. You see when my wife buys twenty eggs, occasionally, we end up with too many eggs, and if there's one thing I hate, it's food waste.
So when I peaked into the fridge and saw a fresh twenty eggs and twelve eggs still left in the old box and only three days remaining on the best before date, I knew it'd be eggs for breakfast!
Ablaze's Healthy Greens and Poached Eggs Salad
4 x Eggs (or as many as you want!)
Cherry Tomatoes
Scallions
Lettuce
Cheddar cheese
One slice bread
Salt
Pepper
Paprika
STEP 1: Boil the kettle and add your hot water to a saucepan and put on a high heat. Once it starts boiling and bubbling turn heat down to medium and crack your four eggs and add to the pan.
STEP 2: While the eggs are boiling, we can chop our tomatoes, Scallions and lettuce and have them at the ready.
STEP 3: The eggs will be done in around three minutes and now drain them and put them on a plate.
STEP 4: Now add some salt and pepper for taste.
STEP 5: Now grab your cheddar cheese and Grate some on top of the poached eggs. Time now to put on your slice of toast.
STEP 6: grab your chopped tomatoes now and drizzle on top.
STEP 7: Get your chopped scallions now and drizzle on top as well.
STEP 8: Get your chopped lettuce now and drizzle on top as well.
STEP 9: I like to add some paprika to give a little flavour and colour to the dish.
STEP 10: Nearly there now. Grab your toast and add to the plate. The toast is great for moping up the runny egg yoke.
