Peanut Butter Lontong, Eid al-Adha mainstay menu

Hello, dear Hive community friends. Yesterday was Eid al-Adha which is celebrated by Muslims around the world. Every country in the world has traditional food when commemorating the big day. As an Indonesian, I also make traditional food during Eid al-Adha.

Lontong is a traditional food and also a special menu during Eid al-Fitr and Eid al-Adha. Some people make vegetable Lontong in their homes. But I make peanut sauce rice cake as a mainstay menu when Eid al-Adha arrives. We can also get Lontong when we are not on Eid. Every morning a lot of Lontong is sold for breakfast.

For those of you who do not know what Lontong is, I will explain it a little here. Lontong is a food made from rice that is inserted into a banana leaf that has been shaped like a tube. Then boiled using a large basin. To make peanut sauce Lontong very easy, first, we have to prepare the basic ingredients, namely:

  • Rice cake
  • Chicken Breast (diced)
  • Fried onions
  • Peanuts that have been smooth
  • Cayenne pepper
  • Red chilli pepper
  • Garlic
  • Red onion
  • Roasted pecan
  • Thick coconut milk
  • Lemongrass
  • Coriander powder
  • Lime leaves
  • Bay leaf
  • Tamarind
  • Sugar
  • Brown sugar
  • Salt

We have to make Lontong first. If you don't want to make it, you can buy Lontong which is already available in traditional markets. If you want to make it, you have to prepare a banana leaf and cut it into a rectangular shape, then roll it to form a chimney with a diameter of 4cm. Then pierce the end with a stick. Next, fill the banana leaves with rice that has been washed thoroughly with water, then pierce the ends with a stick. Then, put it in a boiling pot filled with water. Attempted to completely submerge. Wait about 30 minutes, then drain. That's how to make Lontong.

How to make the peanut sauce.

Puree the chilli, garlic, onion, and coriander in a blender. After finely blended, stir-fry using medium heat and add the lime leaves, bay leaf, and lemon grass so that the aroma is fragrant. Once fragrant, add the chicken pieces and other spices until cooked. After that, add the thick coconut milk and stir gently. Then add salt, sugar and brown sugar. Cook until boiling. After boiling, add ground peanuts and soy sauce. after everything is done, turn off the heat and pour the peanut sauce into a plate that has been filled with pieces of Lontong. Sprinkle fried onions on top and it's ready to be enjoyed.
