Cooking Ginataang Sitaw at Kalabasa ( String Bean and Squash in Coconut Milk)

Hello! How are you? When I was young I was not a fan of any food with coconut milk it tasted weird to me but when I learned how to cook that changed everything I mean everything.

It is still vivid in my memory of the first time they requested me to cook Ginataang Sitaw at Kalabasa it sounds not good but as a cook, I need to cook it to know. Sometimes I always tell myself to not be judgemental before I try it, which changed my perception of everything.

So by the way I will show you how I cook Ginataang Kalabasa at Sitaw.



Ingredients:

  • Garlic
  • Red Onion
  • Ginger
  • Fish Sauce
  • Coconut Milk
  • Ground Pepper
  • Cooking Oil
  • Squash
  • Sitaw
  • Meat
  • Green Chili
  • Chicken Broth Cube
  • Water


Prepping The Veggies:

I cut the string bean first, this is what it looks like how they pack string beans here in the Philippines they wrap them using elastic bands. This is genius it is really easy to cut with this wrap. I first cut the ends of the beans and then cut them 3 inches long but I just eyeballed it to my desired cut.

Then I cut the squash. I cut the top and bottom parts to let out the sticky part which I wouldn't say I like it stays on my hand for the whole day LOL. Next, I cut it in the middle and then cut it again in the middle which now there are 4 cut pieces.

Now time to remove the seeds, I used a spoon to scoop out all the seeds. After that, I peel the squash skin and cut it into small pieces.


Cook the Meat:

Next, I cook the meat what I do is add a little bit of water to the meat when the water is almost gone I add oil and then cook the meat until crispy.

After that, I added the chopped garlic, onion, and ginger and sauteed it.

And then season it with one tablespoon of Fish Sauce.

And then I added the coconut milk. I used Coco Mama which is a good coconut milk and then I added a little bit of water.

When the coconut milk boiling I added chicken broth cube.

Then I added the vegetables I first added the string beans and next the squash. And add green chili on the top.

And then cook it for five minutes or more.

I forgot to add ground pepper so I am going to right now. LOL

Omg, this is the best paired with dried fish! We had pinakbet today for lunch, but i'm craving for something like this naman, woth coconut milk. Dami makakain kapag ganito ulam.

That's true,. pinakbet is delicious too~~ yan may idea ka an kung ano ulam niyo bukas :D sinabi mo pa palaging ubos kapag ganito ulam namin hahah

This was nostalgic!
Back then my father always cooked ginataan , similar to this dish .

The difference waS using fresh coconut milk .

It take me back long years ago! Feels like I could savor it in my mouth.

Yeah, it is! :D Wow I hope you can eat this food again, coco mama is good too hehe but nothing beats the freshly squeezed coconut milk :D aw hope your father cooked for you again I know right same here! :D

This dish look so good and yummy I must admit here we don't use much coconut milk it's also hard to find so I will be very curious to taste a dish with it.
