Hello everyone, hope you are all doing great! The main part of today's recipe is a Mushroom sauce! The recipe itself is pretty easy and it works amazing with any meat, either white or red. The most important thing to consider when making this sauce is the use of good quality ingredients, well, I think it is the most important thing when cooking, aside from doing it with love and giving it each one's personal touch!
The first thing I did was, after buying my fresh mushrooms was to soak them in a liter of water with 5 drops of vinegar, I do this to make sure they are clean and won't have the earthy flavor mushroom have when not properly clean, so, before I started working on the protein, I dedicate a few minutes to this part.
When I made sure the mushrooms were clean, I took them out of the water, drain them, and cut them finely. Then I took one and a half cups of water, one-quarter cup of Worcestershire sauce, some salt, and pepper to cook them until soft. Depending on how soft you like your mushrooms, takes about 10 to 15 minutes to get them soft but not mushy.
A tip I got from my sister-in-law is, to place a wooden spoon on top of the pot to prevent the liquid from overflowing when it comes to boiling. When they were done, I drained them and kept the water aside! DO NOT THROW THAT SEASONED WATER AWAY!
In the same pot I cooked the mushrooms I added a cup of butter to melt in low heat, when it was melted, I started adding wheat flour until it made a kind of dough. It is very important to do this kind of quick and in low heat, cause we don't want the flour to burn.
Once that dough is formed, I added the seasoned water (Remember, the one we do not throw away!) and kept on whisking it until it became a silky smooth cream, then, I added the mushrooms, and! that's the sauce right there!!!
After the sauce was finished, i took a small chicken breast and four "Brasilian" sausages and I put them in salted water to cook.
I shredded the chicken and cut the sausages into small casters, set aside for later.
For the chard salad, i took the chard, and after soaking it in salted water with a bit of vinegar, drained and cut them into small pieces with with scissors (the reguklar ones cause i don't have the cooking ones yet).
Grated some carrots
Put the chard and carrots to cook in salted water, here i just added a tiny bit of salt, cause the seasoning would be once the veggies were tender and done.
For seasoning I added, while still hot, two cloves of garlic, a spoon of butter, a spoon of AJI-NO-MOTO, a teaspoon of grounded black pepper, Worcestershire sauce and soy sauce. Sliced some plantains to acompany the dish, along with a cup of white rice.
