Well hello, stranger
A few weeks ago I made cupcakes from a quike box mix. And then I made "quick and easy" homemade pizza... @jacobtothe and @generikat told me a box mix is nothing to be ashamed of and you know what? I went and got another one 😎. I mean if you're doing something new, commit to it fully!
We are still on holiday and there aren't a lot of kitchen tools and dishes available to use, so making a pudding from start to finish is a bit tricky. I don't have measuring cups or a proper electric whisk or even enough counter space! So box mix is a great alternative.
I picked up a sticky toffee pudding from Woolworths during grocery shopping, since my dad loves Malva pudding. I know it's not the same, but it tastes nearly the same 😅.
Sticky Toffee Pudding
So let's get into it, shall we!! According to the box prepping time and baking is only 32 min, so it's not just easy but time-wise as well. It serves around 6 people, depending on how much you want to eat 😋.
The box comes with two packets. One for the pudding and one for the sauce.
Ingredients
You will need:
- The box mix
Pudding
- 1 egg
- 100 ml milk
- 40g melted butter
Sauce
- 150 ml milk
The Process
First off I would like to point out that I didn't have access to any measuring cups. I had to make do with what was around me and with how big everyone thought something was 😅. It didn't flop so I'll say it was successful!
1- I started by adding the egg and 100 ml of milk to the bowl. Look at my little mug 😊. For today the purple smiley face was my measuring cup.
2 - I melted two tbsp of butter in the little cup. One tbsp is 15ml so I figured a bit more than two will be enough.
3 - While I was busy, @technicalside made us some very creamy Brothers hot chocolate. It's the best hot chocolate I've ever had!
4 - I added the pudding mix to the wet ingredients. I started by adding half the pack and mixing it until incorporated. Once there were no clumps left I added the other half of the pack.
5 - Mix, mix, mix. This is the point where I usually screw up. Why? Because I love eating the batter 😅. And then I end up not having enough for the pudding.
6 - I sprayed the container with cook n spray and poured the pudding in. While mixing the pudding I switched the oven at 180 Celcius (356 Fahrenheit). I placed the pudding in the preheated oven and backed it for 22 minutes.
7 - After 22 minutes in the oven, my pudding was still not done. The oven is old and a little slow, so I just kept an eye on the pudding and waited for it to brown.
8 - While waiting for the slow oven, I prepared the sauce. I went back to my trusty purple smiley face cup and heated 100 ml of milk in the microwave and then added 50 ml of cold milk. While the oven is slow, the microwave overheats everything.
9 - Bit by bit I added the sauce mix to ensure all the sugar dissolved.
10 - And within less than 40 minutes everything was done!
11 - I poured the warm sauce over the warm pudding after poking some holes in it. We waited for a while to let it cool just enough to enjoy.
12 - I added my favourite ice cream, blueberry and cream, and a piece of chocolate. And it was amazing!!
While it was a quick and easy pudding it was still fun to make and convenient for the situation. It's not always possible to have all the ingredients while on vacation and the box mix fits easily in the cupboard and is quick to make.
