It has been a long time since I wrote a recipe post. It is not that I do not seem to have such recipes. Still, I never had that motivation to write and with the increased number of health issues related to covid and now menopause stuff and all that blah blah, it is becoming more of day-to-day life and I guess I lost the motivation.
I was wondering what to write about and I came across the recipe idea. So, here goes.
Most of you would have heard about Indian curries. Each region in India has a different version and it also differs according to the various sects and subsects. So, if you visit a restaurant and order a curry and find it a bit spicy, always remember that it is not based on the exact same recipe because cooking is never about a hard and fast rule. It can vary from grandma to grandma.
Now for the recipe. Do try to prepare it f you like.
Potato stir fry
Ingredients
- Potatoes - 4 medium or 2 large
- Water - to cook the potatoes
- Salt - a teaspoon
- Red chilly powder - 1 teaspoon
- Mustard seeds, red chilly and oil for seasoning
- Curry leaves or Coriander leaves for garnishing - optional
Method
Wash the potatoes. Cook with the skin along with water and salt. Peel the potatoes and slice them. Alternately, you can also peel the potatoes, slice and cook too.
Heat a wok. Pour a spoon of cooking oil. Put a teaspoon of mustard seeds and a red chili to season. Let it splutter. Add the sliced potatoes and stir carefully. After it starts to brown, add red chilly powder and other spices if you like and stir till it is mixed well. Take off from the wok and transfer it to a dish and garnish with curry leaves or mint or coriander leaves.
It is very tasty and can be had with bread or rice or chapati.

It does sound like a simple curry and it is. Anyone can make it and it does not take much time. If you do not like the spice, skip it. Just heat the oil and stir fry and make sure it browns a little to enhance the taste. You can also add tomato sauce and mix it in case you do not happen to have other spices.
Tip
You can store black pepper for ages if it is kept in an air-tight jar.
