I bring to you some healthy meals and relevant information about food which we should always have in mind. 24th October was National Food Day and we know that food is highly important to keep us alive, healthy and improve growth.
Okay, it's my first post on the Foodies Hive Community (drumrolls please) 🥁 🥁 🥁 and I am glad to share this here.
You know, food doesn't have to be boring and there are varieties of getting creative in the kitchen which is fun in the process 😉. I know that some foods have a particular way or method in which they are cooked or prepared depending on your country or region, but I believe there could be a little twist and that's where creativity comes in, bringing a whole new look to a regular meal, keeping in mind to be healthy for consumption.
We may be caught up in our work and care less about what we ingest and reach for junk foods just to ensure we have something in our stomach for some energy to keep going, but then, what nutrients do we benefit from it and how long are we going to keep doing junk foods? I know it may be difficult to do away with junk foods but let it not be a go-to for a meal.
Well, eating healthy and staying healthy is a path to being wealthy (I hope that made sense 🤔). Okay, let's read that again... Yes, it's better to spend money on healthy eating than to spend it on treating deficiency diseases with a number of vitamin supplements or even treating a more critical illness or disease.
Now, here are some delicious healthy meals I made that you can try out.
MEAL: Rice With Vegetable Stir-Fry, Sliced Cabbage And Tomato Sauced Chicken
Honestly, this is really a delicious and nutritious meal. Here I have two scoops of rice, one is white and the other mixed with rich tomato spicy stew (not jollof rice). The vegetables used for the stir-fry were carrot, green bell pepper, green beans, white onions and green peas- I used the dried peas, soaked it for a while, then slightly cooked it and stir-fried with other vegetables. I guess you already know the rest, chicken and sliced cabbage.

I am surprised at how I often add cabbage into my meals and even eat it raw at times after being properly washed (this wasn't me when I was much younger). I have a story to tell you at the end of this blog 😁.
MEAL: Vegetable Ginger-Garlic Noodles
If vegetables don't marry noodles, count me out. At least one type of vegetable added can pull me to have a taste, but you know what? I prefer when the veggies are of variety like the one you see here 😋

The ingredients were in agreement and were glad to be part of this meal 😉. I used a pack of 100g of indomie instant noodles chicken flavour, grated ginger and garlic, curry powder, vegetables- purple onions, fluted pumpkin leaves (in Nigeria it is called Ugu), carrot, fresh tomatoes and red bonnet pepper. I can tell you that this is beyond delicious.
I know you are salivating 😄 but not to worry, you too can make any of these meals, it's pretty easy. If you are in a location where you can't find fluted pumpkin leaves, you can substitute with fresh spinach, kale or any greeny vegetable of choice.
I know we could have cheatdays where we would wish to skip being mindful of eating healthy and having a box of sweet treats but then, we don't have to be lost while enjoying the sweet treat 😃.
MEAL: Stir Fried Cabbage and Carrot With Spicy Sauced Chicken
Here is another light, nutritious and easy meal (you can have it as dinner), yeah, I had it as dinner.

I used cabbage (the main vegetable), carrot, onions and small amount of green beans (can you spot any? Sure you can). To make it tasty, I added chicken seasoning cube, curry powder, thyme, grated ginger & garlic, pinch of salt. The chicken was well seasoned, cooked and dipped in spicy tomato sauce. It's really good and safe to eat light at night.
Story Story!
Okay guys, storytime, I remember when I was much younger, I rejected salad because of cabbage (I wasn't pleased with the smell and taste, it made me feel like throwing up),... I gave my portion of salad to any of my sibling who wanted it. I thought I would escape eating salad through that means, because I ate with my siblings at the dinning table while my parents ate in the sitting room. So my Dad caught me one day and told me to sit with him and my mum in the sitting room where he would monitor me. He said whenever salad is served at dinner, my position will be in the sitting room until I become used to eating salad.
I didn't understand what my Dad did for me, I thought I was suffering 😆. I made sure a bottle of water was with me and for every spoon of salad, I almost finished a cup of water. I ate in tears. He made sure I almost finished the salad before eating the rice in order for me not to fill my stomach with rice and reject the salad. This continued until I got used to eating salad. I was happy in the end and thanked him. See me now enjoying cabbage like it's banana (my favourite fruit).
Conclusion
It's important we get fresh fruits and vegetables and make sure that whatever we want to consume is in good condition. Also, we can choose to eat more of healthy snacks. I try to eat apples almost everyday, though I snack on other fruits.
Now let's dive in and get creative in our cooking, have fun and eat healthy. Remember, eating healthy leaves you clean and fresh looking.
