I'm a big lover of anything pasta and jollof pasta is not an exception. I would choose jollof pasta over pasta and sauce any time, any day. I only opt for that option whenever I'm too tired to go through the stress of slicing and cutting the veggies. If not for anything I love the slight burnt flavor that comes with jollof. I always ensure I have a bite of the bottom pot. It's believed that the original taste of a meal is in the bottom of the pot.

As much as possible I try to make use of fresh vegetables, tomatoes and pepper to prepare pasta rather than using grounded pepper and tomatoe paste. The difference is always clear when a meal is made with fresh vegetables. Thankfully I had some fresh tomatoes and peppers as well as onions remaining from my last shopping earlier in the week.

The ingredients I will be using for my jollof pasta include pasta, tomatoes, pepper, onions, vegetable oil, carrot, green peas, sausages, eggs. Some of these ingredients are optional and some are necessary, so it all depends on you. It's even possible for you to add more ingredients of your choice such as crayfish, dry fish, sliced meat, ponmo etc.

The preparation of jollof spagetthi is quite easy. Slice the tomatoes, onions, and peppers into your desired size or preferably blend the mixture roughly. Afterwards, stir fry the mixture until it has thickened sort of, and this can take between 10 to 20 minutes depending on the quantity of the mixture and how high the heat is.

During this period ensure that you stir at all times to prevent it from burning.

When it has fried enough, add your sausage, seasoning and salt to taste. Add the pasta by breaking it into your desired size or just leave as a whole in the pot.

Leave to cook for about 10 minutes on medium heat. When you check and confirm that it is soft enough you can add your sliced onions and green peas and allow to simmer for about 5 minutes. You may add more water if needed. Some people may prefer to stir fry the vegetables separately before mixing it.

The choice is yours. Stir together and your jollof pasta is ready to serve.

This lovely meal can be eaten either for breakfast, lunch or dinner.

In our house it is my wife who loves pasta most. She lived in Italy (I did to but not for as long) and she speaks the language. So she has an affinity for Italian food and also for the Italians themselves (Italians are a the Nigerians of Europe I think :)

I speak Swedish (which is very close to Danish. And then I can get along on Italian, French and German :) Not really good at it though.

Well, it's quite a fair amount of languages but I may find it difficult to cope easily when I travel out of Nigeria. That's one of the benefits of having mastery of different languages, I think. For you, there's no country you travel to that you won't survive without stress.
