My husband caught us some mullet so we could freeze the roe, I only like the white roe if it is cooked well done, but you should never cook the red roe well done, it will be like eating tiny balls of sand, the more you chew, the dryer it becomes. Red roe cooked right is very good, when I was young Dad would cook mullet, roe, grits, and pork N beans for dinner.
We call it red roe, but it has more highlights of yellow than red color. Back before the net ban, we would make 6 months of our income in the 6-week roe mullet season. This year they can not get enough to sell as roe mullet, the fishermen are getting less for them now than we got in 1994 the year before the net ban. The ban was in 1995 but it took effect in July and the roe season starts in late November so we did not get to fish them that year.
After getting the roe packaged and in the freezer, I canned 20 jars of mullet. We can make fish cakes with them, I will smash up the fish in a bowl put an egg, and sauteed chopped onion, bell pepper, and celery, mix in a little flower and bread crumbs along with whatever herbs I have on hand, and mix well. I dip a tablespoon full into hot grease and flatten it with a spoon. Let it brown and flip it to brown the other side.
Or we can use it like you would for tuna fish and make sandwiches from it. He also smoked a bunch of the mullet but I forgot to take a picture of them, this is an old one, and now he took all of the meat from the skin and mixed it with cream cheese for a fish dip, it tastes so good. Now I am hungry to put some on crackers. Have a great night.
