Graduating from Teflon: My Journey to Better Cooking / 脱テフロン!?大丈夫、できます!

When I first started living on my own more than 20 years ago, my mother bought me a set of Tefal pans and pots with detachable handles. They were non-stick, easy to cook with, and I made great use of the set she gave me.

However, after moving to Europe and experiencing the earthquake in Japan, I became more conscious of health and environmental issues. Gradually, I started to distance myself from Teflon-coated pans. I began to worry about whether Teflon was safe when heated especially when it's exposed to high heat for long such as deep frying something, and I realized that I preferred cookware without any unnecessary coatings. The biggest stress, though, was having to throw away a pan whenever the Teflon coating began to peel.

A few years ago, I decided not to buy any more Teflon-coated pans. At first, I was nervous about cooking without Teflon them. I worried, "Won’t the food stick?" But surprisingly, once I got used to it, I found it wasn’t a problem. Each stainless steel pan has its quirks, but with a bit of practice in preheating and using oil, I learned that you can cook just as well without Teflon. My two favorite pans:

Even tricky dishes like gyoza can be cooked perfectly without sticking like you can see in the photo on top of this post. I can also make dishes like Korean pancakes (chijimi) and steamed buns without any issues.

Now, the only Teflon-coated pan left in my kitchen is a small 10cm one. I bought it just before my daughter was born, and it’s filled with memories of cooking countless fried eggs and omelets for my daughter, who has loved eggs since she was a baby. Since I only use it for making fried eggs, it’s fortunately still in good condition.

One benefit of not using Teflon-coated pans anymore is that, even if something gets burnt, I can clean the pan thoroughly without worrying about damaging the coating.

Nowadays, I’ve become confident in cooking without relying on Teflon. I can cook delicious meals without the frustration of food sticking to the pan. For me, moving away from Teflon pans has been a wonderful way to improve my cooking skills and reduce stress.

As I was making an omelet yesterday, these thoughts crossed my mind.

20年以上前に一人暮らしを始めたときに、母がTefalの取手が取れるフライパンとお鍋のセットを買ってくれました。焦げ付き知らずで、調理が楽にでき、母が買ってくれたセットを大いに活用しました。

でも、ヨーロッパに移って、震災を経験して、健康や環境への意識が高まるにつれて、徐々にテフロン加工のフライパンから距離を置くようになりました。テフロン加工が加熱されて大丈夫なのか、できれば余計な加工はない方がいいなと気になりつつ、テフロンが剥がれるとフライパンを捨てなければいけないのが最大のストレスでした。

数年前に新しくテフロン加工のフライパンを買わないと決意しました。最初は、テフロンのないフライパンで料理をすることに不安を感じました。「食材がくっついてしまうのでは?」と心配でしたが、意外なことに慣れてくると問題はありませんでした。ステンレス製のフライパンには、それぞれの癖がありますが、予熱や油の使い方を少し工夫するだけで、きちんと料理できることを知りました。我が家で毎日のように使っているフライパンたち。

難関の餃子ですが、ばっちりくっつかずに焼けます。

チヂミも肉まんも焼けます。

今、私のキッチンには、小さな10cmのテフロン加工のフライパンが一つだけ残っています。これは子供が生まれる少し前に買ったもので、赤ちゃんの頃から卵が大好きな子供にたくさんの目玉焼きや卵焼きを焼いた思い出が詰まった一品です。目玉焼きだけを作るために使っているので、幸いにもまだ傷がありません。

テフロンのフライパンを使わなくなったことで、もし焦がしてしまっても、加工を気にせずにしっかり洗えるという利点も感じています。

今では、テフロンに頼らずとも、料理がくっついて悲しい思いをすることなく、おいしく仕上げられるようになりました。私にとってテフロンフライパンからの卒業は、料理の腕を上げてストレスを減らす素晴らしいきっかけになりました。

昨日、卵焼きを焼きながらそんなことを考えていたのでした。

テフロン気になるなあ・・・という人は、思い切ってテフロン卒業してみてはいかがでしょうか。きっとできます!

Nice. It's cool you've chosen the stainless steel pans, I've heard those can be used forever just as long as you don't damage them by doing something crazy.

I've gone towards carbon steel pans which are a bit different, but also one option away from teflon pans :)

Hi @apsu! Nice to see your bread icon again. Luckily I don't have a plant to fight with my family using the pans so I might use them through my life 😁 Carbon steel pans sound interesting too!

I was delighted that you're still here! Hopefully you will not need to fight, so it seems promising and I'm assuming you'll never need to buy new pans again. Less junk and more savings :)

That gyoza looks really good. I've never had stainless steel pan and looks like they are sturdier and last longer than the coated pan. BTW, have you ever shared your chijimi recipe? I want to try it!

They are quite sturdy. I think I'm using the large one more than ten years. I didn't write Chijimi recipe yet but this is something similar :)

I never worried about Teflon and I even thought it was better for my utensils to have it... until, like you, it started to come off. Now I hardly use the pans (since we bought the air fryer, divine treasure!!), but I do use the casseroles and one of them starts asking for a replacement. I had reservations about replacing it with one that didn't have Teflon, but you've finished convincing me. 😃

Happy to read that my post helped you. I felt pity to throw away pans when the coating come off ... They function but just the coating has damage. I will go to see my friends' place to see how air fryer works ;)

同じく、テフロンが剥げてくると棄てて新しいものを買い替えなければならないのがストレスです。結局消耗品なんだよなあ~というのが・・・
以前akipponnさんの同じテーマの記事を読んで、私も大鍋&小鍋はステンレスに換えました。フライパンはテフロン加工のまま・・でも最近剥げてきたようでそろそろ買い替えです。この記事を読んで、次はテフロンやめようと思いました。

テフロン、くっつかない安心感はあるのですが、剥げている以外は普通にフライパンなのに捨てるのがもうほんとストレスというかもったいないというかかわいそうで。。一時期一つは相方用に買っていたのですが、もう根性でテフロンなしに慣れてくれとスパルタです😁

When I moved to Tokyo with my partner, he chose stainless for our kitchen pans. It's easy to clean because we don't have to worry about the coating.
If it was only me, I would choose teflon.
Our tamagoyaki pan is teflon, but my partner complains a lot because it's hard for him to wash.
Maybe when there's an opportunity to buy a new one, I'll get stainless steel tamagoyaki pan.
I'm still not an expert in cooking tamagoyaki on a round pan. Yours look so nice!
And your gyoza also looks so nice!

Haha, I'm on your partner's side. He is right, we must carefully wash it and it's not easy. But I must say most of the Tamagoyaki pans in Japan are coated. I think some expensive one like copper Tamagoyaki pan might have no coating but it's not common.

I practiced making Tamagoyaki in a regular pan in Germany ... It's not easy to find Tamagoyaki pan for affordable price in Germany 😉 That's foreigner life.

私は長女が生まれた時にテフロンをやめたのですが、最近また使い始めてしまったダメ人間です、笑 フライパンだけですが、出来るならやめたいです。
長女が生まれた時に買ったステンレスの鍋やフライパンが、少々疲れてきたので替え時なのでしょうか…特にフライパンはハンドルが取れてしまったり、良くくっつくので餃子なんて怖くて焼けません。

波、ありますよね。うちもとっきどーき相方用に買うんです。本当は練習して欲しいのですが。。でもコーティングが剥げて、しばらくまたなくて増やさないように決心するものの、今後も買わない保証はありません😅 ハンドル、こわいですね。確かに長持ちするとはいえステンレスのフライパンの弱点かも。うちのフライパンたちはまだ10歳ちょっとなのでがんばってほしいです。
