Today I made vegetable rice or can I say rice with vegetable sauce?
I wanted to make fried rice but I found out that I had only carrot and green pepper at home. Although these are necessary Ingredients for fried rice, but they are not the only ingredients required. I do not have those other ingredients at home, and I got lazy to visit the nearest grocery shop. Besides it is a Sunday, their opening time may be late and they may not have what I want, so I decided to arrange something not too bad. Here's.

Rice
Tomatoes
Red pepper
Fresh pepper
Carrots
Vegetable oil
Onions
Fish
Plantain
PREPARATION
- Wash and cut the vegetables, carrot and the plantains .
Wash the rice thoroughly and put it on fire. Your water measurement should be equivalent to the cups of rice, especially owing to the type of rice.
In a frying pan, put oil and when hot, fry the plantains.
In the remaining oil - when plantain is completely fried, fry the washed fish. Set the oil aside.
In a hot pot, put your vegetable oil. Allow to be hot a little more, then add the onions to be followed by ground tomatoes and pepper. Allow to fry well for ten minutes.
Add your seasonings and spices ( garlic, ginger, curry, knorr cubes and spicity). Use generously but in comparison with the quantity of tomatoes.
Stir, taste and add little salt if necessary.
Add the carrot
- Add the green pepper.
- Stir, taste again to know if any spice is needed more
In another two minutes the sauce is ready.
Check the rice all along and serve.
I allowed the carrots and the green pepper not to overcook so as to be crunchy somehow.
My family really enjoyed it. It's not a big deal but it's an added spice of how to make your rice other than just the conventional rice and stew.
