Greetings friends. A pleasure to greet you, today I would like to share with you a little of the seasoning that I inherited from my grandmother. Since I was a little girl I loved to watch my grandmother cook and learn about cooking with her who every day filled our bellies with delicious dishes whether they were savory or sweet or very simple but made with love for us. Pattern that I copy with pride and joy to be able to cook my family delicious dishes like hers and remember great moments lived by her side.

In this first opportunity to share with you I bring you a delicious baked pork leg easy and very simple to prepare. the ingredients to use are:

  • Pork leg
  • 30 grams of olives
  • 30 grams of capers
  • 1 paprika
  • 1 head of garlic
  • 5 chili peppers
  • bunch of coriander
  • 2 onions
  • cumin, oregano, paprika, seasoning salt
  • soy sauce to taste

We start by taking the pork leg and a knife and we stick it many times to open holes where we are going to insert part of the olives, capers, and garlic cloves so that once it is in the oven all the flavors penetrate the pork leg. Besides how delicious it is when you eat pieces with some of these ingredients.

Ready the grafts, in a blender place the rest of the garlic, 1 onion, half a bell pepper, chili peppers and cilantro, blend very well and add to the pork leg, overflow the pork leg with the cumin, oregano and take to the refrigerator for 1 or more days so that it absorbs all the flavors.

We also take the rest of the seasonings and chop them into strips and add them on top of the pork leg with more soy sauce and spices to taste if desired.

I took it to the oven the next day for 12 hours starting with a slow cooking at very low heat after four hours we increased the flame a little and let it cook until it is dry and well browned. But you can also bake it for 6 to 8 hours and it will be juicy.

Here is the beautiful result, a beautiful crispy and golden brown pork leg that I had to put on it. Forgive me for not posting how we enjoyed it, we were at a family reunion and did not get to take pictures of the sandwich we prepared with oregano bread, tomato, lettuce, onion, mayonnaise, ketchup, sweet mustard and barbecue sauce. A delight to eat and share as a family and celebrate each year of life of each one of us.
