Cassava is a staple food for Indonesian people since ancient times, so it is very familiar if there is a cassava stock in the kitchen. Cassava is a food that has complex carbohydrates and lots of fiber which is good for the body. But as good as the benefits of cassava are, why aren't there big companies in Indonesia that grow cassava commercially such as oil palm, rubber and tea?
The big question surprised me, because almost every Indonesian eats cassava every day. So that cassava are only planted by a few farmers to get profit and very rarely Indonesian farmers have large lands just to grow cassava.
One of them is my neighbor who has a narrow land, he uses the land to grow cassava, usually in one harvest, he only gets a maximum of 150 kg of cassava and sells them in the nearest market. Due to the large public demand, the cassava that he sells are sometimes valued at a high value. The rest, the cassava he gets will be distributed to the neighbors around the house.
Lucky me, I got some of the harvest in one big plastic bag, he said I got 2 kg net, and I can make anything from the cassava. I am very happy because cassava are one of my favorite ingredients in cooking, because they are easy to prepare and also very good for those who suffer from diabetes. The doctor said, I can slowly eat less rice by replacing it with cassava, can replace carbohydrates that are more complex and high in fiber.
I love dessert, this time I really want to make a dessert from cassava that is delicious, filling and with an easy recipe. As you know, I like to share my information and knowledge about food, various recipes and also food tips, especially about Indonesian food. Well, this recipe you can try at home, full of sweetness and happiness.
Making this dessert is so easy, it only requires a few ingredients which are certainly easy to find. Following the steps correctly so as not to fail to cook it, make sure to adjust it to the dose of the recipe that I will give. For that, here are some of the ingredients needed;
Ingredients:
- 1 kg of cassava that has been peeled and washed.
- 100 gr sugar
- 65 ml of liquid coconut milk (can use cream)
- 70 gr melted margarine
- 1 egg
- Vanilla extract
- Pinch of salt
- 2 tsp tapioca flour
How to make caramel cassava steamed:
- Heat 100 grams of liquid sugar, just until the liquid sugar is brown so the caramel is not bitter, then put it in a ceramic bowl, don't use a flammable plastic bowl. Wait until the caramel hardens, you can put it in the freezer when it's cold to make it easy to harden.
- Grate the cassava until smooth, you can use a blender and squeeze a little water to reduce it. Add coconut milk and stir until well blended.
- Put the cassava into a large container, add salt, tapioca flour, margarine and eggs, stir until completely mixed.
- Heat the steamer for 15 minutes, make sure the steamer is ready to use.
- Put the dough into a bowl that already contains caramel, then place the bowl containing the dough into the steamer, cook until cooked. It usually takes 20-25 minutes over medium heat.
- When it is perfectly cooked, remove the caramel cassava, wait until it cools down. Place on a plate. Caramel cassava steamed is ready to be served.
