Making muesli at home is easy. You can to combine nuts, seeds, and some cereals to get a delicious mix that you can use for breakfast.
Today I want to share my Muesli Energy Bars recipe that I use for snacking after exercise.
Most recipes for making energy bars consist of a cereal mix using honey or chocolate as binding ingredients. The disadvantage is that to have a solid energy bar. You must always store them in the freezer. When removed from the refrigerator, the bars become soft and crumbly. These bars have no crunchiness at room temperature.
This recipe will allow you to make firm and crunchy energy bars. These bars are great!
1/4 cup powdered sugar
1/4 cup granulated sugar
1/2 cup oat flakes
1/2 cup vegetable oil
1/2 cup cranberries
1/4 cup peanuts
2 tablespoons chia seeds
1 teaspoon ground cinnamon
Yields 12 units
Before we start, we should toast the oat flakes and peanuts. It will provide crunchiness to the energy bars.
In a bowl mix the wheat flour, powdered sugar, granulated sugar, and only 1/4 cup of toasted oat flakes. Reserve the rest of the oats for later.
For the energy bars to have the right sweetness, you need 1 cup of sugar. However, I use half of this amount in the form of granulated sugar because, with the heat of the oven, the sugar melts and provides a little moisture to the bars. This amount of granulated sugar when it cools is what allows the bars to be compact and not crumble but does not moisten them. This way, we will have delicious crunchy energy bars.
These energy bars are crunchy yet soft on the inside. You can prepare them by substituting some of the ingredients. You can use raisins instead of cranberries. You can also substitute almonds or walnuts for peanuts. You can get the variety of flavors that your imagination allows!
The energy bars can be stored in airtight glass jars or cookie tins. They keep very well at room temperature for many days.
