Corn fitters are originally Native American cuisine but very popular in India also, specially in rainy season when fresh corn harvested in Northam western part of India. At our place, we used to prepare various recipes using fresh corn (Known as Bhutta in Hindi). The most popular use is fresh roasted corn. Hot roasted corn in cool rainy season is a favourite of almost anybody here.
Generally, spicy corn fritters are popular, but here today I prepared sweet fritters dipped in sugar syrup. Procedure is almost the same, only ingredients are different.
Ingredients
- Fresh corn 🌽 3 nos
- Sugar 1 cup
- All purpose flour 1/2 cup
- Vegetabe oil for deep frying 2 cups
- Cardamom powder 1/2 tsp
- Baking powder 1/4 tsp
- Water to prepare sugar syrup 1 cup
Procedure
- Corns are cleaned and grated to remove seeds.
- Make paste of seeds in grinder.
- Sugar syrup is prepared using 1 cup sugar and a cup water. Bring it to boil and simmer for the next couple of minutes.
- To make batter, add all-purpose flour and cardamom powder in corn paste
- Mix it well vigorously.
- Add baking powder
- Heat oil in Kadhai (heavy bottom round pan)
- Take a small portion of batter and deep-fry until it turns golden brown.
- Transfer immediately into sugar syrup.
- Soak in sugar syrup for a couple of hours.
Your sweet and juicy fresh corn fritters are ready to relish!!
