Foodie in Me - A Dish That Never Gets Me Bored!!!

Since the day I started blogging using inleo.io, there is a lot of change in me and on top of that, I have been blogging a lot as @leofinance and @leogrowth have provided an opportunity to write on different topics as part of Monthly Prompts and as part of the September Inleo, the topic for 17th September is A recipe for appetizers and I thought I will write about that on my favorite dish which we call as Veg Pulav and here I go with the details.

As shown in the above image, veg pulav is a combination of rice and vegetables cooked using spices and other ingredients as I detail below.

The ingredients we need for preparing veg pulav are:

Chopped Onion - 1 big one.
Chopped green chilies - 3 to 4 green chilies based on the spiciness you require.
Chopped Carrot - 1 Big Carrot.
Chopped Beans - 6 to 8 Beans.
Chopped Potato - 1 medium to big Potato.
Chopped Curry Leaves - 6 to 8.
Chopped Coriander Leaves - as required.
Split Dry Fruits - 6 to 8 split Cashews and Almonds
Sweet Corns (optional, I use this because kids like this very much).
1 and half spoon of oil(I used sunflower oil for this item).
Garam masala(spices)
Ginger and Garlic Paste - 1 to 1 and half spoon.
Salt as required(I used a little over 1 spoon)
Turmeric Powder - Half spoon.
Mustard and Jeera - little quantity.
Raw Rice - 1 and Half glass of water glass.

P.S: I had written an earlier blog on this food item and these ingredients and pictures are taken from that.

Some of the ingredients are also shown in the above and in below picture just for reference and I might have used Indian name for these, but you can recognize the ingredients by looking at these 2 pictures.

So, we need to chop all the vegetables and split the dry fruits and soak the rice for some time before washing it off to remove the extra starch.

Use a rice cooker for preparing the veg pulav as the pressure cooker allows the ingredients to mix well and also the dish will be ready faster.

We just need to ensure that cooker is big enough to hold 2 times the content as the rice and vegetables when cooked, will be almost double the size of all the ingredients we use as rice becomes thicker and even vegetables suck water and will be more bigger compared to the size of the raw ones.

Pour 1 and half table spoon of oil (normally we use sunflower oil or groundnut oil) and let it heat up in low flame for about 2 minutes and then pour in the mustard and jeera with split dry fruits and then curry leaves.

Once these ingredients fried, include the chopped onions and chilies and vegetables along with salt, turmeric powder and garam masala (the grind spices, we use the readymade One as shown in the pictures above) and let them mix well before adding rice to it.

Add the rice to the fried vegetables which are cooked in the mixture of spices, salt and turmeric so that, even the rice will have that flavor of the ingredients before we add water to it.

When the rice mixes well, add other ingredients like corns (which are optional, but will add more taste and kids will love the corns!!) and chopped coriander leaves just to add more aroma to the rice.

Close the cooker lid and let it cook in low to medium flame with 3 or 4 whistles of the cooker.

Once we stop the gas burner, let the pressure in the cooker go off which will also allow the rice to cook further in the steam the cooker will have for some time.

Ensure the pressure in the cooker is completely off and then open the lid and mix the rice well as vegetables might be in One place and rice will be at the bottom of the cooker.

After mixing, serve this recipe with raitha (combination of curd with chopped onion, coriander leaves and chiles if needed or simply with some chutneys such as dry grinded groundnut powder or even with wet grinded tomato chutney.

This is One of my favorites and I ask my wife to prepare it atleast 2 times in a week and believe me, I never get bored with this dish and I would urge you to prepare it and taste it and share the feedback.

We use it as a breakfast, for lunch and even for dinner, as this combination is never boring One.

The combination of rice, vegetables, spices will be very aromatic and when served hot, it will be an appetizer for us.
