Today is Sunday, and as soon as the morning started, my younger daughter came up with her cute little demand, “Mom, I want a chicken burger!” Since there's no school on Sunday, As a mother, I always try to prepare something special for my family that’s both delicious and healthy.But I thought, why not make her day special with a homemade chicken burger?
To keep things interesting, I decided to get a bit creative and add a twist to the usual chicken burger by making it with tandoori mayonnaise. I’m not a huge fan of fast food at home, but when your kids ask for something with so much love, it’s hard to say no! Let me walk you through how I make this delightful burger that my kids can't get enough of!
Ingredients:
250g boneless chicken, cleaned and cut into pieces
1 teaspoon red chili powder
1 teaspoon chaat masala
1 tablespoon black pepper powder
Salt to taste
2 tablespoons yogurt
1/2 teaspoon garam masala
2 tablespoons oil
1 teaspoon turmeric
1 teaspoon coriander powder
1 teaspoon more red chili powder (for the tandoori mayonnaise)
4 tablespoons mayonnaise
Butter, as required
Burger buns
Lettuce leaves
Onion rings
Cheese

Marinating the Chicken First things first, let’s marinate the chicken. Take the cleaned boneless chicken pieces and place them in a bowl. Add black pepper, lemon ans salt mix well.
Then add red chili powder, coriander powder,chaat masala, yogurt, and garam masala, pepper powder. Mix everything well and let it marinate for at least 30 minutes. This step ensures the chicken absorbs all the flavors and stays juicy when cooked.

Preparing the Tandoori Mayonnaise While the chicken is marinating, we’ll prepare a flavorful tandoori mayonnaise that gives this burger its unique taste. Heat a pan over low flame and add 1/2 teaspoon of turmeric.
Then add 1 teaspoon oil, red chili powder, and coriander powder. Stir it for a minute until the spices release their aroma. Now, take this spiced oil and mix it with mayonnaise in a small bowl. And there you have it, homemade tandoori mayonnaise ready to use.
We will mix Schezwan or red chili sauce in the tandoori mayonnaise.

𝘾𝙤𝙤𝙠𝙞𝙣𝙜 𝙩𝙝𝙚 𝘾𝙝𝙞𝙘𝙠𝙚𝙣
Once the chicken is marinated, heat some oil in a pan. Place the marinated chicken pieces in the pan and cook on medium heat until they are fully done—golden and juicy on the inside. Make sure to turn the pieces occasionally so they cook evenly.

Assembling the Burger Now comes the fun part—assembling the burger! Spread a generous amount of the tandoori mayonnaise on both sides of the buns.
Next, place fresh lettuce leaves on the bottom buns
followed by the chicken pieces (I like to cut the chicken into smaller pieces so it’s easier to eat).
Drizzle some more tandoori mayonnaise over the chicken.
Add onion rings and a slice of cheese on top, and finally, place the top bun.

Grilling the Burger Heat a pan with a little oil and place the assembled burger in it. Cook on low flame until the cheese melts and the burger is heated through.
Ready to Serve! And that’s it! A delicious homemade tandoori chicken burger, perfect for a weekend treat or a special family meal.
The moment my daughter took her first bite, the happiness in her eyes made all the effort worthwhile. She was delighted, and so was I!
