I hope you are happy and healthy Today I'm going to share a simple Ivy Gourd Stir Fry with a twist. This recipe doesn't require any fancy ingredients and cooking with Ivy Gourds is always fun as it's one of versatile vegetables that compliments many aromatic spices used in cooking it. I love the crunchy texture of this veggie. It's everyones favourite at home, which makes it easy for me .Did you know that ive gourd is a very healthy vegetable? It helps in controlling blood sugar levels and is good for diabetic patients. It's also rich in fiber, protein, and vitamins.It's also a good source of fiber, beta-carotene, and other micronutrients. It's definitely a smart choice to include this green vegetable in your regular diet. so let's start
☘️INGREDIENTS ☘️
☘️250 garam ivy gourd
☘️2 spoon oil
☘️2 chopped onion
☘️2 chopped tomatoes
☘️half teaspoon cumin
☘️half teaspoon fenugreek
☘️1 tsp ginger garlic paste
☘️half teaspoon turmeric powder
☘️Half teaspoon red chilli powder(as per taste)
☘️half teaspoon cumin powder
☘️half teaspoon garam masala
☘️half teaspoon coriander powder
☘️coriander leaves
☘️salt as per taste
☘️Preparetion ☘️
☘️First, rinse 250 grams of ivy gourd very well in fresh water. Drain the excess water.
☘️Thinly slice off the top and bottom ends, and discard them. Slice the ivy gourd vertically in 4 parts.
(🍀Method of making ivy gourd)🍀
🍀1.Heat 2 tablespoons oil (sunflower, peanut or mustard oil) in a heavy and thick bottomed kadai. An iron kadai works best for this recipe.Once the oil becomes hot, first add cumin and fenugreek seeds and let it cook. After that add chopped onion and ginger garlic paste.Let the onion cook until it becomes golden brown After that we will add turmeric powder, coriander powder, red chili powder, cumin powder and garam masala and mix everything thoroughly and let it cook for 30 seconds.
🍀2.Now add chopped tomatoes and salt as per taste and let it cook for 2 minutes until all the tomatoes melt.
🍀 3.After that add 250 grams of ivy gourd. And mix all the spices well and add a little water and let the pan cook for 10 to 15 minutes until the becomes thick
Now Turn off the heat...

🍀serve with coriander leaves of hot rice roti, paratha or you can enjoy it with rice and Sambar or Rasam.
