Good day Hive! How are you today? I hope all of you are doing well. It is raining in our place this morning. So, I decided to cook Beef Ribs Soup with a lot of vegetables for breakfast. In our province, we called the soup as Nilat-an nga Baka.
The recipe is perfect for the cold weather during rainy day here in my country, the Philippines or during winter period in another country.
It is not easy to find beef meat in my hometown’s wet market. Most of the meat available every day is pork and chicken.
For me to get fresh beef meat, I need to order ahead of time. I went to town yesterday in the afternoon, which is Saturday, just to order beef ribs and boneless beef meat. There is only one vendor who sells beef in our hometown, and they only sell it every Sunday morning of the week.
Every Sunday morning, the beef meat are always sold out because the meat is fresh, and they only sell beef once a week.
Around 6 o’clock in the morning, I went to town to get the beef meat that I ordered, and I also bought ingredients such as vegetables and spices for making the soup. I am just quick on the market because I still need to cook breakfast.
When I arrived home, I cleaned everything that I bought, packed, and put some beef meat on the refrigerator to cook for the upcoming days. Then, I started preparing the ingredients for the soup.
I was not able to buy all the ingredients for the Beef Ribs Soup because it is not available like sweet corn.
I prepared first all the ingredients before cooking in our outside kitchen.
The Ingredients for Beef Ribs Soup that I cooked are:
1.) 2 kilo of fresh beef ribs
2.) 2 Liters of Mineral Water or any type of water if it is safe and clean.
3.) 1 piece of large cabbage
4.) 1 piece of large chayote
5.) Squash or pumpkin
6.) 1 small piece of Taro
7.) 2 pieces of Okra or Lady’s Finger
8.) String beans
9.) Spring Onions
I just placed the spices in one plate.
10.) Ginger
11.) Green Chili
12.) Garlic and Read onion
13.) Fresh Basil leaves
14.) Fresh lemon grass
For the amount or number of vegetables, herbs, and spices, it really depends on your preferences if you like to put a lot of vegetables or less. You can add sweet corn if it is available.
Procedures:
First: Place all the fresh chopped beef ribs on a clean cooking pot.
Second: Add the ginger.
Third: Add the garlic and red onion.
Fourth: Add 2 Liters of Mineral Water or any type of water if it is safe and clean, and then a pinch of salt. The amount of salt depends on the taste that you like.
Fifth: Place it on the stove or fire and wait for the water to boil for 60 minutes until the beef meat becomes tender.
Sixth: When the beef is already tender, add the chopped squash or pumpkin.
The beef is already tender.
I added the chopped squash.
Seventh: Add the chopped Chayote.
Eighth: Add the taro and then mixed using ladle.
Ninth: After 10 minutes, I added the green chili.
Tenth: After 15 minutes, add the chopped string beans.
Eleventh: Add the fresh lemon grass and okra (lady’s finger) and stir.
Twelfth: Wait for the water to boil and add the cabbage.
Moreover: Add the spring onions and then mixed the ingredients using a ladle.
Lastly: Add the herb, fresh basil leaves.
The Beef Ribs Soup is now cooked and ready to serve for breakfast. It is normal in my country, Philippines to have soup in the morning for breakfast, noontime for lunch, and in the evening for dinner especially when the weather is cold or when it is raining.
I also shared the soup that I cooked to my siblings. 2 kilo is not that much for everybody to eat, but I just shared a bowl of Beef Ribs Soup to them. My mother does not eat beef, so, I just prepared fish for her to eat.

For the Spring Onions, basils, and lemon grass, I just got it from our vegetable garden in our yard.
