this delicious easy to make recipe is my entry to this week's theme of qurator's hive top chef
while you may grill these mushroom tikka skewers, it is autumn here and grill season is over so i am making them indoors in a frying pan. either way they are sure to be a hit.
ingredients for 6 skewers
24 whole button mushrooms evenly sized
24 squares each of onion, tomatoes and green or red paprika
marinade:
cashews
ginger garlic paste
oil
lemon or lime juice
salt
coriander powder
cumin powder
garam masala
turmeric
chili powder
i am not specifying amounts here. use your own judgement and make to your own taste.
grind the cashews first together with the powdered spices. then add the ginger garlic paste, lime juice and oil and blend a little more. if you don't have ginger garlic paste, just blend together equal parts of ginger and garlic to a paste.
clean the mushrooms with a brush and a knife. do not wash them or they get soggy. chop the paprika, tomatoes and layers of onion into squares about the size of the diameter of the mushrooms. mix them all together
mix the marinade in with all the veggies making sure they are all covered. set aside for at least 30 minutes up to 2 hours. the longer the better.
slide the veggies onto the skewers starting with an onion square. then a mushroom, then a paprika and last a tomato. repeat until there is 4 of each per skewer.
heat a little oil in a skillet. i always use iron skillets but you have to be careful with the heat here because the cashew based marinade tends to burn easily. place the skewers in the pan and fry them, turn them often to avoid burning. if they are tightly together it is better to lift them up before turning. otherwise when you twist one only some of the veggies turn while others don't. it is not as hard as it may sound, just keep turning them while cooking. it should take about 10 minutes maybe a little more.
the tikka is ready to serve. now you could eat this with rice or whatever you want. here i have made rice dosas.
my favorite way to eat them is to take a chapatti or tortilla or dosa etc in one hand, place the whole skewer on the dosa and pull out the skewer leaving the mouth-watering tikka neatly in the dosa
