mushrooms tikka

this delicious easy to make recipe is my entry to this week's theme of qurator's hive top chef

while you may grill these mushroom tikka skewers, it is autumn here and grill season is over so i am making them indoors in a frying pan. either way they are sure to be a hit.


ingredients for 6 skewers
24 whole button mushrooms evenly sized
24 squares each of onion, tomatoes and green or red paprika

marinade:
cashews
ginger garlic paste
oil
lemon or lime juice
salt
coriander powder
cumin powder
garam masala
turmeric
chili powder
i am not specifying amounts here. use your own judgement and make to your own taste.

grind the cashews first together with the powdered spices. then add the ginger garlic paste, lime juice and oil and blend a little more. if you don't have ginger garlic paste, just blend together equal parts of ginger and garlic to a paste.

clean the mushrooms with a brush and a knife. do not wash them or they get soggy. chop the paprika, tomatoes and layers of onion into squares about the size of the diameter of the mushrooms. mix them all together

mix the marinade in with all the veggies making sure they are all covered. set aside for at least 30 minutes up to 2 hours. the longer the better.


slide the veggies onto the skewers starting with an onion square. then a mushroom, then a paprika and last a tomato. repeat until there is 4 of each per skewer.


heat a little oil in a skillet. i always use iron skillets but you have to be careful with the heat here because the cashew based marinade tends to burn easily. place the skewers in the pan and fry them, turn them often to avoid burning. if they are tightly together it is better to lift them up before turning. otherwise when you twist one only some of the veggies turn while others don't. it is not as hard as it may sound, just keep turning them while cooking. it should take about 10 minutes maybe a little more.

the tikka is ready to serve. now you could eat this with rice or whatever you want. here i have made rice dosas.

my favorite way to eat them is to take a chapatti or tortilla or dosa etc in one hand, place the whole skewer on the dosa and pull out the skewer leaving the mouth-watering tikka neatly in the dosa

Ah these look so good, it is a great alternative for those who do not eat meat and want the "kebab" feeling out of a meal. I never tried to combine cashew and mushrooms, but it sounds good.

Are tikka basically meatless versions of kebabs? They remind me of shish kebabs except better seasoned (and no meat!)

What is garam masala? I googled and found different versions one can make at home but there were many alternatives and substituted ingredients.

so nice to hear from you. tikka refers to meat and veggies or meatless alternatives like paneer or mushrooms that are cut in chunks, marinated in a spicy marinade and cooked on a skewer. in india real tikka is traditionally cooked in a tandoori oven but a grill or frying pan will do fine. tikka is served dry while tikka masala refers to tikka served in a gravy
garam masala is a general term for mixed spice powders. there are countless combinations. some are simple and similar to an american christmas spice blend while others may have up to 50 ingredients, many of which are hard to come by in the west. even though the word garam means hot most blends are not pungent. rather the whole spices are roasted and then ground into powder and blended. virtually any recipe you find and make at home will be far more flavorful than what you can buy in a shop and your kitchen will smell divine while making it and again while cooking with it. here @hindavi makes her own blend, sells it and occasionally teaches it in her indian cooking classes.
