Today I'm going to show you a dessert that my grandmother used to make for us. The Hungarian name of the dessert is málé or kukoricamálé. I don't have her recipe unfortunately, as she knew the ingredients without a written recipe and she had never written it down. For this occasion I had to look for a recipe on the internet and thank God, there are plenty out there to choose from. You just have to type the name of the dish into the magical search box and you're flooded with recipes, one better than the other.
So this dessert is as old as the last century and it was the food or poor. Back in those days poor people had corn as that has been a staple food for ages and with a few ingredients, corn was turned into a dessert. Today it is used by those who'd like a gluten free dessert.
To be honest, I only started to make this corn pie because a few years ago my niece was recommended gluten free diet and with that, you don't have many options for a healthy dessert. Luckily she loved it and I'm making this for her every time she asks me to and for the whole family actually as it's a delicious one.
This is an upgraded recipe, compared to what my grandmother used to make us. This has cherry in it as well, as adding some fruits, especially sour is always a good idea.
The original recipe is from here and please note, I doubled the quantity as it was for a family event.
Ingredients
- 600g corn flour,
- 2 packets of baking powder,
- 200ml sunflower oil,
- 450g sugar (would have been 500g but it seemed too much and honestly 400g would have been fine),
- 400ml milk (1.5% fat),
- 6 eggs,
- 2 pckets of vanilla sugar(this wasn't part of the original recipe),
- sour cherries (this wasn't part of the original recipe either),
- sugar for powdering. source
Method
The method is pretty simple, all you need is a mixing bowl and a mixer.
Beat the eggs with sugar and vanilla sugar, till it becomes white. Add the oil, mix well, then add the milk as well. Mix the baking powder with the corn flour and slowly add to the mix. Add a pinch of salt as well.
I'm always using baking paper, so I lined my baking tray with paper and poured the mix into it. The added the cherries on top. Unfortunately all of the cherries sank as soon as I dropped them into the mix, but that's not a problem, doesn't change anything.
I then preheated the oven to 180C, baked it for 20 minutes, then reduced the heat to 150C and baked for another 30 minutes, till the top became golden brown.
I'm against powdering the top of cakes with sugar as I'm trying to make healthy desserts and adding more sugar to it doesn't make it healthy at all.However, for the sake of the photo, I powdered one piece 😜
And voilà!
The original recipe says you can serve it with jam as well, but I didn't as it has sour cherry in it.
