Everyday Breakfast Blogs is a challenge that I made to myself to post and share to you guys how I prepare my everyday breakfast. 😄
Anyone can join in and I will gladly be happy to upvote and know what other people are having for breakfast daily, and hopefully we will get to know kinds of breakfasts that are made from different parts of the world!

Now I present to you...
Fresh Grilled Fish With Eggplant Salad😋
Fresh fish (Galonggong) grilled on a charcoal fueled stove (Kalan) paired with a slightly sour but tasty Eggplant salad makes for a healthy breakfast that packs a punch! ☺️
Here are our ingredients for this healthy breakfast:
- 3-4 Eggplants
- 2 onions
- 1 green chili pepper
- 2 native tomatoes
- 1 banana (optional)
- 2-3 pieces of Fresh fish (Galonggong fish, or any kind of fish suitable for grilling) 😋

Preparation
Eggplant Salad:
- Cut the onions, tomatoes, chili pepper into fine pieces.
For the eggplant, grab a fork and poke holes into each eggplant.
This is to ensure the insides get cooked. Grill until they are soft.
Once soft and cooked, and set aside in cold water then peel the skin. 😊
Grilled Fish:
- Degut the fish and slightly salt.
Cooking
Eggplant Salad:
- Cut off the heads of the peeled eggplants and mash them in a bowl, then add in the minced ingredients.
Then add a table spoon of vinegar and some soy sauce ( optional)
Grilled Fish:
- Grill the fish for 8-10 minutes on each side. One tip to check if the fish is cooked is when its eyes become white and dry. 😁
Serve with a cup of rice, a few slices of banana and...
