Sometimes I run out of ideas what to cook or I am in a rush to feed the children. What will be my remedy cooking for that day then??
YES, nothing goes wrong with EGG FRIED RICE!
It is because it is a one pan cooking with all the proteins like meat and eggs with the vegetables as well as rice for the children! The dish is also more in bite size for the children, easier to chew and swallow.
I always do a simple fried rice with nothing too elaborate with just some ingredients such as:
Cabbage
Minced pork
Eggs
Overnight rice
Oyster sauce
Fried shallots and onions
Diced shallots and garlic
Butter
Overnight rice is preferred because it is harder and more distinct, not sticking together. I think most people like every grain of their rice be nicely coated with egg. Yes, I mean EVERY grain!
I have a tip for this, which I learnt from some TV show.
I forgot whom I learnt it from, but I find it just genius doing it this way! Beat a few eggs, depending on the amount of your rice, and pour the egg mixture into the rice bowl. Mix every grain of rice thoroughly with the eggs and tadaaaa. This guarantees all rice grains are coated with eggs! Brilliant, isn't it?
After that, heat some butter in your heated pan and add in the diced garlic and shallots. I like to have a lot of shallots and garlic in my friend rice. It just adds aroma to the fried rice. Then I cooked my seasoned minced pork in the pan. Next will be the chopped cabbages. Cook them down till they soften. After the ingredients are cooked, finally add in the egg coated rice into the pan and keep stirring till it dries up a bit. Last but not least, season with oyster sauce to taste.
I garnished my fried rice with some fried garlic and shallots, too, to have some crunch. Yummy!!!
I have to break my carb fast today because I cooked fried rice, oh man! But.... have you learnt the trick yet? Now, every rice grain is covered with eggs evenly! Woohoo!
