Making my own meals is one of the greatest gift of life I appreciate till this day, my mother taught me well and I am glad I learnt it because how would I have survived in this expensive world where prices of stuffs and services keep going higher and higher without any means for a price drop to happen. The only time I get to eat out is when I am totally exhausted or just crave for locally made dishes that are unavailable in my locality. There are many meals that one can prepare for a very short time and it would still come out looking yummy when the necessary ingredients are in place such as noodles, eggs, pasta, rice, yam and so on.
One of my go-to recipe for a delicious and speedy meal is jollof spaghetti with fish and boiled eggs. To prepare this meal, you do not need to spend hours or go above your pay grade to be able to afford the ingredients necessary to make it delicious. I remember one time I was hungry and I knew noodle would not go to far for me, I searched around the kitchen cabinet , found me some spaghetti, tomato paste, pepper, onions and the rest was history. I made the meal to the point that it happened to be the healthiest meal I had that day. Meal is one of the budget friendly meals that an average individual can conveniently make quickly as a meal for the day.
Jollof pasta or spaghetti is a popular dish made by Nigerians which can be spicy or less spicy. It does not require really much but the ingredients used to make this meal include tomato paste, grinded or dry pepper, dried or fresh fish, salt, spices, onion, groundnut oil, the spaghetti itself, water and eggs.
How to prepare jollof spaghetti
To achieve the preparation of this meal in less than 30 minutes or 45 minutes, all I have to do is simply mix my tomato paste with pepper 🌶️, onion 🧅, the spices like Maggi and so on in a bowl why I steam the groundnut oil suitable for the meal on a pot on the fire. When this is hot enough, I pour my mixture into the pot and stir till it's cooked. After this, I add enough but minimal water to cook the pasta and immediately add my spaghetti to it. Because of the fact that I want to achieve a quick process in making this meal, I do not wait for the water to boil before adding my spaghetti because I do not see the difference.
After this proces, I leave my spaghetti to cook for some few minutes because too much cooking will bring about a moist and too soft spaghetti at the end, so in the process I add my crayfish, fresh or dried fish and anything I want to use to garnish it. After cooking to a point where the water is all dried up you are done with your cooking and it's as simple as that.
In essence, the jollof spaghetti is one of my go to meals that is easier to prepare and feels healthier and Fuller to it.
