Hello, Hivers and community. Today I will show how we make eggplant in India totally Vegan Tasty and delicious.
It seems like many ingredients but it is so simple and easy.
Here are the ingredients:
8 eggplants locally grown
2 potatoes
2 tomatoes
hand full fresh coriander
1/2 cup fresh coconut
3 small onions
2 tbsp oil
1 tsp salt
1/2 tsp turmeric
1 tsp garam masala.
Here are all cleaned and chopped vegetables and all ready ingredients except oil.
Heat oil in the pan.
Add sliced onion to the hot oil.
When the onion turns translucent put sliced eggplants in the pan.
Stir them until eggplants change color. Takes approximately 4-5 minutes.
Add chopped tomatoes and chopped potatoes in the eggplants. Stir them well for around 2 minutes.
Add salt, turmeric, and garam masala and give a nice mix. Cover and cook them on low heat. until potatoes get softer.
Time to add coriander and freshly grated coconut saving a little for garnishing.
Sprinkle 2 tsp water on the vegetables and cook them until they become soft.
Here our simple vegan eggplants are ready to use with any food like bread, chapati, roti, and rice.

These eggplants are very special and locally grown and they melt in the mouth and have no astringent bitterness.
