We were back from our staycation for the two-day Diwali public-and-school holiday — it had been eating non-stop for Monday and Tuesday. Therefore, for today, I decide to cook something clear and clean for the family. Most Chinese families love soup, and yes, I am cooking soup today!
I can safely say this soup is in my cooking list once a month, or maybe even twice a month. It is so easy, loaded with vitamins, not to mention it is delicious and nutritious. Let's start!
Classic ABC Soup!
Steps!
Pre-boiled the meat
I used pork bones because they are the cheapest now, although already considered expensive for me. Hence, I always tried to choose the part with more meats attached to the bones, that way, we have meat to eat too at the same time.
Always clean the meat thoroughly because you do not know how clean their chopping board was. Then, followed by boiling the meat for a short while to remove the scum.
After that, clean and rinse the meat clean.
Prepping the vegetables
I used big onions, some garlic, celery, potatoes and carrots this time. Usually, I also add in tomatoes but I do not have, so let skip tomatoes.
All-in-one-pot
Heat up the water in the pot, once heates up, I added in all the vegetables. Some people will add in potatoes and carrots later so that they will not be too smashed soft, but we all like them soft, so I just add all in at the same time.
Then, it is followed by adding in the pork bones.
Later on, I found out I still have one more purple sweet potato, so just add in also.
This is such a versatile soup, you can technically add in anything you want. My mother would add in some Chinese cabbage and corn cobs. My mother-in-law sometimes added in beetroot. Whichever goes.
2 hours later
I set the pot to boil for 2 hours, super easy. Then seasoned with some salt and pepper, no sugar needed due to natural flavours from pork bones and the vegetables. Some people added in chicken stock powder, I would add in anchovies cube but I skip today due to wanting some really clean clear eating.
Lunch!
This is my simple early lunch today. I love to eat this soup with rice. Also, I steamed some cheese tofu for myself and the kids. That's about it, out simple one-pot ABC soup for lunch and dinner.
Youngest son's lunch looks like this. I help him cut the meat to smaller pieces.
Dimsum!
Husband went out earlier and packed some dimsum for us too. Yayyy!
