So much leftover rice!!! Do you use it or do you throw it away? I never threw away leftover rice. Rice is so precious to me. I grew up learning not to throw away leftover food, and so this time, let's fry the rice. Fried rice is another dish adored by many parents in our midst. It is versatile — you can add any ingredients you want — and children love it too.
Korean Luncheon Meat Fried Rice
It was my first time buying Korean luncheon meat. Some time back, I had been watching people hunting for it, but for whatever reason, I did not buy. This round, during the 10.10 sales, I managed to get two cans for RM14 via Shopee platform. Let's try it!
Ingredients
Ingredients needed were the Korean luncheon meat, diced. Together with diced carrots, good amount of onions and garlic, and eggs.
If you read my blog before on fried rice, you would know I love adding lots of eggs into my fried rice. I think the eggs just bring the whole level up in terms of taste and fragrance. I used 6 eggs, and usually I seasoned the eggs with Maggi sauce, a technique I learned from my mother-in-law.
The Korean luncheon meat I used for this one looked like this. The other one has the word 'SPAM' whereas this one was without the word.
Steps
After slightly beaten the eggs, fry them in a pan. Remember to use generous amount of oil to fry the egg, to have those fluffy fragrant beautifully fried eggs.
In another wok, heated up the oil then sautéed the garlic and onions till fragrant.
After that, luncheon meat and carrots were added and continue stir fry till the meat was slightly crisp on some corners. I then added in salt, oyster sauce and soy sauce, mixed them all up.
Next would be adding in the leftover rice. My fridge is so powerful. The rice was harden. And needed some time to be broken down and I even needed to use stainless steel ladle to press them down to mash up those rice-balls.
Continue to mix the rice with all the ingredients, fry them so that the rice had some 'wok' aroma, we called it 'wok hey'.
Lastly, the eggs were being added in, and combined with the rice mixture.
I wanted the fried rice to he a little saltier as well as more savory, so I added in a bit more salt, a dash of chicken stock powder and another tablespoon of soy sauce. Just do not be lazy in mixing them all up till balance seasoning. Otherwise, there would be one part which was extra tasty. Ops!

The boys were veryyyyy happy when they knew I cooked luncheon meat fried rice. The eldest son was even more jubilant when he knew I bought Korean Luncheon Meat. Our first time trying and we love it. He also so happen loves K-pop. It was indeed a satisfying happy meals!
