Al llegar a Brasil me costó un poco adaptarme a su culinaria, más hoy siento la gran necesidad de que todo el mundo conozca y pruebe esta delicia hecha en Amazonas llamada tacacá.

Es utilizada en platos culinarios de Amazonas y generalmente te duerme un poco los labios, y es una planta medicinal sirve como anestesia, es diurética, digestiva, antiasmática, es utilizada en tratamientos de garganta, tuberculosis y más. Es cultivada en la región norte de Brasil y especial para el caldo de tucupi.

Es un caldo amarillo extraido de la yuca tiene un proceso, es rallada y luego el caldo descansa para retirar la goma y queda el tucupi, cuando lei sobre el tucupi me encontre con una leyenda que Jacy y lassytatassu que serian la (luna y la estrella de alba) se pusieron de acuerdo para visitar el centro de la tierra y en eso se toparo con Cuninana (una serpiente) esta serpiente mordio la cara de Jacy ella lloro y sus lagrimas fueron directo a una plantacion de yuca (mandioca), las marcas en el rostro de jacy quedaron para siempre por Cuninana y apartir de eso surgio el tucupi.

  • 2 litros de tucupi

me gusta con menos goma y no tan salado y agregue un poco más de cebolla picadita y perejil. Rinde para 6 personas esta receta.

I like it less rubbery and not as salty and add a little more chopped onion and parsley. Yields this recipe for 6 people.
