Chicken Cacciatore Recipe

This Chicken Cacciatore recipe also known as “hunter’s chicken,” is a rustic Italian dish full of bold flavours and will leave you and your guests licking their plates!. This hearty one pot recipe combines tender chicken, vibrant vegetables and a rich tomato based sauce. It’s easy to prepare and perfect for a cosy family meal.

Ingredients

6 bone-in, skin-on chicken thighs or drumsticks
Salt and pepper, to taste
2 tablespoons olive oil
1 large onion, diced
3 garlic cloves, minced
1 to 2 red capsicum, diced
1 cup mushrooms, sliced
800grams crushed tomatoes
1/2 cup chicken broth or dry white wine
1 to 2 table spoons dried oregano
1 table spoon dried thyme
Fresh basil and parsley, chopped (for garnish)

Instructions

Step 1: Pat the chicken pieces dry with paper towels, then season generously with salt and pepper. Heat olive oil in a large, deep skillet or fry pan over medium heat. Sear the chicken on both sides until golden brown, about 5 minutes per side. Remove and set aside.

Step 2: Remove chicken from pan and set aside, add the onions and garlic. Sauté until fragrant, about 2 minutes. Add the capsicums and mushrooms, stirring occasionally, and cook until softened, about 5 minutes.

Step 3: Pour in the crushed tomatoes and chicken broth (or wine). Stir to combine. Season with oregano, thyme, (you can add chilli now if you want it more spicey). Let the mixture simmer for 5 minutes to blend the flavours.

Step 4: Return the chicken to the pan, pushing it into the sauce. Cover the skillet, reduce the heat to low, and simmer for 25-30 minutes, or until the chicken is tender and fully cooked.

Other Additions

Chicken cuts: Bone in thighs or drumsticks are traditional, but boneless chicken thighs or even breast pieces work well. Adjust cooking time.

Vegetable options: Zucchini, carrots, or celery can be added for variety.

Make ahead: The dish tastes even better the next day as the flavours meld together, making it a great option for meal prep.
