Today I would like you how to make a healthy banana oat cake. This is the ideal recipe for using up over-ripe bananas that are on the verge of being thrown out.
The basic ingredients are oats, honey, and of course some bananas. You don't need any flour, sugar, or milk. If you have coconut or chocolate chips in your pantry, you can add them as well but they are not compulsory.
They are healthy too, as they are full of fibre. And if you care about your weight, they only contain 141 calories (if you make them without the coconut and chocolate chips, this goes down to 124 calories).
Ingredient
I learned this ingredient from internet but I already adjusted it to make the taste suit me the most.
- Bananas: 2 ripe (or over-ripe) bananas. The riper the bananas the better.
- Oatmeal: 100g (if you use rolled oats, you have to grind it, no need to be as fine as flour)
- Baking powder or baking soda: 1.5 coffee spoon
- Olive oil: 1 tablespoons
- Chicken eggs: 1 egg
- Honey: 2 tablespoons (If you like sweet, you can add more)
- Yogurt without sugar: 50 grams
- Vanilla or Cinnamon powder or cocoa powder: 1 coffee spoon
- Roasted nuts, chopped (almond, walnut, macca, .....)
- Chopped dried fruit. (raisins, dried blueberries, ....)
Instructions
- Peel off bananas, cut 1.5 bananas, and then mash them with a fork. The remaining 1/2 banana will be used to decorate the cake later.
- Place the bananas in a bowl with all ingredients, mix well, then let them rest for 15 minutes.
If the mixture is loose, add more oatmeal.
If the mixture is thick, add a little milk.
3 . Preheat the oven to 160 degrees Celsius for 10-15 minutes.
4 . Pour the mixture into a small shape or your favorite shape , decorate the surface with 1 slice of banana, 4-5 roasted nuts or chopped dried fruit.... Then put the cake in the oven, and bake at 160 degrees C for 30 - 45 minutes.
The temperature of each oven may vary with the display setting, you should pay attention to the oven when baking
This cake is great on its own but there are things you can add to it to enhance the flavor or add more sweetness. Here are some ideas:
- Mix in 1 coffee spoon of cinnamon to make a cinnamon banana-flavored oatmeal cake
- Add in ½ cup chocolate chips to add more sweetness and add some chocolate flavor.
- Or add in other mix-ins you enjoy with your oatmeal like coconut flakes
