Hola a todos y a todas. ¡¡Les deseo un feliz día!! Yo el día de hoy estoy un poco confundida porque la verdad no sé cómo se llama este plato. Yo usualmente lo hago y lo llamo arroz con pollo, pero acabo de notar que este pollo es FRITO y no lo llevé a la cazuela con el arroz, sino que los junté en el plato… y creo que tienen que estar en conjunto durante la cocción para poder llamarlo un “arroz con pollo”.

A mí me encanta el arroz con pollo, a mi familia por otro lado no mucho; es decir, no es su plato favorito, aun así, lo comen. No les gusta el arroz con pollo convencional debido a que no les agrada que el pollo que se cocine junto con el arroz: ya que se le va el color y no les simpatiza la textura que adopta… son algo caprichosos al comer.

Hoy mi amorcito me dijo que valió la pena la espera, lo que significa que estuvo muy bueno. Esperaron un poco porque voy tomando las fotos mientras cocino. Mi hija no pudo esperar el arroz y se comió solamente el pollo. Mientras lo hacía afirmó que estaba muy rico. Y mientras tanto yo me preguntaba si sería capaz de comerse el arroz sin el pollo… Lo bueno fue que lavó los trastes y luego logró comerse todo su arroz.

Me entusiasmé un poco con las fotos y tomé una del mini chef de la casa ayudando a su mami a cortar los ingredientes. Les informo que a este niño no le gusta el arroz, pero el pollo frito le fascina, así que le tomé una foto a sus manos mientras estaba comiendo. Sin más que decir, vamos con la receta.

Para preparar este plato necesitamos:

  • ¼ de pollo.
  • 2 ½ de arroz.
  • 2 tallos de cebojin.
  • 1 tallo de celery.
  • 4 ají dulces
  • 10 dientes de ajos.
  • Un poquito de orégano.
  • Un poquito de onoto en grano.

To prepare this dish we need:

  • ¼ chicken.
  • 2 ½ of rice.
  • 2 cebojin stems.
  • 1 stalk of celery.
  • 4 sweet peppers
  • 10 cloves of garlic.
  • A little oregano.
  • A little anatto grain.

Procedimiento:

Comenzamos limpiando el pollo y despresándolo: le quitamos un poco la piel.

Luego, con sal, ajos y orégano hacemos una pasta en un mortero. Dicha pasta la añadimos al pollo y lo dejamos macerar por 15min.
Mientras tanto, vamos lavando y picando los aliños.

Process:

Then, with salt, garlic and oregano we make a paste in a mortar. We add this paste to the chicken and let it marinate for 15 minutes. Meanwhile, we are washing and chopping the dressings.

Pasado este tiempo: en una cazuela, vamos a calentar un poquito de aceite vegetal y agregamos algunas pieles de pollo. Esto con la finalidad de que desprendan su sabor y grasa, que es la que nos servirá para freír el pollo. Después que ya estén bien dorados, los retiramos de la cazuela y freímos las piezas de pollo a fuego medio/alto para que no suden. Lo tapamos, esperamos 7min y pasado este tiempo, lo volteamos; esperamos otros 7min y las piezas de pollo ya estarán listas.

After this time: in a casserole, we are going to heat a little vegetable oil and add some chicken skins. This in order to give off its flavor and fat, which is what we will use to fry the chicken. After they are well browned, we remove them from the casserole and fry the chicken pieces over medium heat /high so they don't sweat. En la misma cazuela, colocamos las semillas de onoto, dejamos que suelten su color y las movemos.
En cuanto hayamos obtenido el color, las sacamos con una cucharilla y proseguimos a sofreír todos los aliños con este aceite onotado adquirido. Los removemos o salteamos un poco y le añadimos el arroz previamente lavado en dos aguas. Mezclamos todos los ingredientes por un minuto y agregamos agua de manera que cubra el arroz: ahora dejamos que hierva hasta que seque por completo.

Colocamos la flama de la cocina en mínimo (como si la vamos a apagar, pero sin que se apague), le colocamos una bolsa por encima al arroz tratando de no dejar espacios sin cubrir. Esto es para que mantenga todo el calor y se cocine parejo y en menos tiempo, lo tapamos y esperamos unos 12 minutos.

We put the kitchen flame to a minimum (as if we are going to turn it off, but without it going out), we put a bag on top of the rice trying not to leave any uncovered spaces. This is so that it keeps all the heat and cooks evenly and in less time, we cover it and wait about 12 minutes.
