Anything yam is my favorite food, be it boiled, porridge, fried, roasted, or pounded. As long as yam is in it, I can eat it anytime.
If I had to choose one of the different dishes made with yam, my favorite would be boiled yam and egg sauce.
Boiled yam served with egg sauce has a special appeal and a particular place in my heart. Yam and egg sauce make for a filling and nutritious supper. The unique aspect of this dish is that it can be consumed as either breakfast, lunch, or dinner.
Here is a step-by-step instruction for preparing it:
Ingredients
For the yam
Yam tuber
Water (sufficient to boil the yam)
Salt (optional).
For egg sauce:
Eggs
Diced tomato,
finely chopped onion,
chopped fresh chili peppers (to taste)
minced garlic (optional)
vegetable oil
salt to taste.
seasoning cubes or powder (optional to taste)
chopped spring onions for garnishing (optional).
How to prepare it
For yam:
Peel the yam carefully to remove the skin, cut it into smaller pieces of your choice.
Wash the yam and place it in a pot, season with salt, and cover.
Once the yam is cooked, drain out the water and set the cooked yam aside.
For egg sauce
Crack the eggs into a bowl, beat them lightly, and set aside.
Heat the vegetable oil in a pot or frying pan over medium heat.
Add the chopped onions
followed by your minced garlic,
then your diced tomatoes and chili peppers.
Cook for a few minutes while stirring occasionally, until the tomatoes have fried and are soft.
Add salt, pepper, and seasoning cubes or powder to taste.
Stir well to combine
Pour the beaten eggs that had been properly stirred into the mixture
Allow it to steam for a few seconds
then stir gently to scramble the egg
Continue to cook for a few minutes.
After that, remove the heat and serve hot, together with the boiled yam.
