Today I will give you the recipe for a very delicious dish.

We Aegean people (Aegean Region people) love to eat greens. In addition to fresh raw greens, we also love to eat cooked greens.

I will share with you a herb recipe that I love very much. We can only eat this dish in March and April. This is because the grass of this dish is wild. That is, it is not a cultivated grass variety. These herbs, which grow wild in the forest, are collected. You can collect it yourself or buy it from people who tap and sell it.
The name of this herb is "Hibiscus"
I was so happy to see it being sold at the market last week and immediately bought a bunch.
It has been in the fridge for a few days. Two days ago I also decided to cook it.
I had to clean this weed that I was going to cook first. I weeded and cleaned weed.
However, I must say that this job is really a bit difficult. I removed all the leaves one by one. Then I rinsed it several times. I even soaked it in water for a few hours. I wanted to make sure it was clean enough.
I finally got the votes to cook our food.

Ingredients for our meal
Onion,
hibiscus grass,
olive oil ( of course, all meals in the Aegean region, especially appetizers are prepared with olive oil),
Tomato paste


The ingredient list is pretty simple, but it's definitely a delicious dish/appetizer.

We start our meal by frying the onions. I cut the onions into small cubes, you can also cut them into half rings if you want.
Then I sautéed the onion with olive oil until golden brown.

After the onions were roasted, I added a tablespoon of tomato paste and continued frying.

Then I added hibiscus, the main ingredient of our meal, to my meal.
Before adding it to the meal, I removed the herbs, chopped and washed them.

After adding the hibiscus to the pot, I stirred my food.

Finally, I added a glass of warm water to the dish. This way the herbs will cook much better.

I turned the stove down and cooked my food on low heat until all the water had evaporated.

After about 20-25 minutes, my food was ready. I turned off the stove and let the food rest a bit.
You know that the dishes cooked with olive oil are much more delicious when they are rested.
I served my food after it had cooled.

I really like this dish. Every year, I cook a kao once in the spring. Unfortunately my dear husband doesn't love it as much as I do. But since it is a very healthy food, he eats a little at my insistence.
