Inspired by my Sri Lankan friends, I'm sharing a recipe for a delicious egg curry. This is a great option for days when there's no meat or if you prefer a rice-based meal. Let's take a look at the ingredients and how to prepare this flavorful egg curry.
Ingredients:
5 boiled eggs (The amount of eggs can be changed as needed.)
1 small chopped onion
3 green chilli pods
5 crushed garlic
Two medium sized tomatoes
150ml of coconut milk
Salt as required
Curry leaves and ranpe
2 tablespoons of coconut oil
1 teaspoons crushed chili powder.
1 teaspoons curry powder
3 teaspoons meat curry powder.
1step :
First, place a container on the stove, and once it heats up, add some oil. Once the oil is well-heated, incorporate chopped onions, curry leaves, and ranpe, mixing everything thoroughly. You'll experience a delightful aroma at this point.
2step : Now, avoid frying this mixture thoroughly; aim for a half-fry. Reduce the heat to low, then add curry powder, meat curry, chili powder, and salt to taste, stirring well. Continue mixing this blend on a very low flame until it turns black. Ensure the flame is low, as a higher flame may cause the curry powder to darken too quickly.
3step: After the curry powder turns black, add the eggs. While collecting the eggs, break the egg into two pieces from a corner and add it. This is done by absorbing the spice mixture inside the egg.
Now mix this well.
4 step :After mixing well, add the coconut milk. Mix it well and let it boil for about 3 minutes with the lid closed.
5step : Remove the lid, then add chopped tomatoes and green chillies, sautéing the mixture. Once it thickens sufficiently, remove it from the heat.
This is how delicious egg curry is prepared. It can be added to food even with rice and pan roti. Have a nice day until we meet again.
