We often, throw away the leftover food or give it to the needy people. In my case I always prefer to reuse them in different way. I can turn stale chapati, into crispy pizza or rice into fried biryani. This time I had some stale paneer, which I used in making Paneer paratha.
Generally, paneer paratha were made by stuffing paneer into flour dough and roll it and bake it on pan. But today I tried differently, which turns out to be very tasty and crispy too. I had some extra panner from last night dinner. I kept them to eat in morning. I tried to give a new texture and style through cooking.
This was my white sauce paneer made up of using paneer milk cream and cashew. I made two different rolling of wheat flour dough. I pressed them flat and round. I applied some spicy schezwan chutney on one base. You can make use of tomatoes ketchup too. And placed the leftover paneer on it and spread it at every corners. I placed the second base on top of it. By using a fork I closed all the open ends. It give a nice little design to the paratha.
Then I put the flat bread base to bake on a warm pan. I made use of edible Ghee to bake it. In between i turned it upside down to bake both the sides.
Our crispy paratha is ready to savor. It was delicate experiment, with nice paneer stuffing. I sliced them into four pieces to take a feel a pizza.
Trying new way of cooking is always fun. I took this into my school lunch and friends like them too.
