This is one of my favourite dish - nice, simple and easy to cook. Actually, anything I cook is simple. I eat to live so I don’t do dishes that involve a lot of work.
Here we go. Stir-fry French beans!
Cut the beans into small pieces.
Prepare some garlic and dried prawns. These are optional. If you don’t like garlic or dried prawns, you can leave them out. I love both dried prawns and garlic because they add flavour to the dish. Cut the dried prawns and garlic into fine pieces. We are ready to start frying the beans.
Heat up the wok and add some oil. Add in the dried prawns first and give it a stir. Add in the garlic, followed by the French beans and stir-fry them for a couple of minutes. Add salt to taste.
While the beans are frying, prepare the eggs, or you can prepare them beforehand. Break two eggs, add some soya sauce, or salt and beat them.
When you are happy with the bite of the beans, add in the eggs and stir fry them with the beans. When the eggs are cooked, the dish is ready.
That is the general process of stir-frying French beans. Oil and salt are according to your taste. Garlic and dried prawns are optional. If you don’t like them or if they are not available, you can do with out them. You can add another egg if you are a fan of eggs.
Prepare the dish once, fine tune it the second time and by the third time, you will have the perfect plate of stir-fry French beans.
You can also prepare long beans in this manner. Cut the long beans to dice size, and prepare the dish as you did with the French beans.
