For those who don't know, I am Venezuelan and in my country we really like to eat arepas, it is a fundamental part of our gastronomy, these are prepared with corn flour, they are very easy to make and the best thing is that you can combine them with whatever you like the most. you like it.
Within the ketogenic diet, it is very complicated to include arepas because they are high in carbohydrates and these would take us out of the state of ketosis (natural metabolic state of the body in which it burns fat instead of carbohydrates to obtain energy) and in the diet only allows 40 grams of carbohydrates per day, keeping track is easy, this allows you, in addition to controlling your diet, to know what you can eat and how much.
For those who like to eat arepas like me and are on a diet that practically "forbids" them, I bring you this recipe, easy, delicious and with only 10 grams of carbohydrates per serving.
Tostadas de Harina de Maíz con Huevo y Salame / Corn Flour Toast with Egg and Salami
Ingredientes:
•Harina de maíz
•Sal
•Huevo
•Salame
•Ajo
•Aceite de oliva
•Mantequilla
•Perejil, merquén (opcional)
Ingredients:

• Egg
• Salami
• Garlic
• Olive Oil
• Parsley, merqueen (optional)
Preparación de las tostadas / Preparation of the toasts
In a bowl, place the flour, salt and water, mix until the dough that forms has no lumps, let it rest for 5 minutes and continue kneading, you may need more water, so add it little by little until you leave a soft and consistent dough.
They form 25 gram balls and on a board they place a plastic bag underneath and on top so that the dough does not stick (I put a little oil on the plastic to make it easier when separating).
With whatever you have on hand and find it easiest, press the dough until it is the thickness you prefer. I use a plate and I like it to be quite thin.
Then they place them on a very hot griddle, let them brown on both sides and then put them in the oven at 250°F for approximately 8 minutes until they are well toasted.

Chop the small salami and some garlic (the garlic is optional and it is my personal touch, but they are very delicious), and in a frying pan place olive oil and fry, then place the eggs with salt and ground black pepper, they are going to stir with Calm down so that they don't burn and when they are almost cooked, add a spoonful of butter, finish cooking for a few seconds so that the eggs are not too dry.
Place the egg on the toast, you can add the vegetables you like the most, I added parsley and merquen with a splash of olive oil, because the contrast of flavors is exquisite and the spicy touch that the merquen provides makes the difference.
