My Simple and Best Chicken Salad

I went to the grocery the other day. I bought roasted chicken, walnuts, potatoes, Fuji apples, butter, aged Gouda, Parmesan cheese, Tilapia fillets, celery, fresh corns, green beans, and other vegetables. My basket is overused, hehehe!

I shall show you My Best Chicken Salad Ever!

I used cream cheese, mayonnaise, honey mustard, lemon juice, and garlic powder. Put these ingredients into a mixing bowl and mix it well so that all the dressing ingredients are well blended. If you don't have honey mustard, then use equal parts of honey and mustard!

After which I diced the cooked chicken breast, celery, and grapes. I added it to the bowl, gently mixing it till everything is well coated with the dressing.

Then I roasted walnuts, chopped them coarse, and added it to the salad.

Now it is ready to served!

Gosh. A good proper chicken Caesar with bacon, cos lettuce and croutons. Not such a big fan of the actual anchovies but they're nice when added into the dressing. Not so pungent. Otherwise a Greek salad with big juicy calamata olives and soft creamy Danish feta.

Don't you find it flattering and complimentary when asked by family / friends to prepare something you enjoy eating?! I bet there's more than one thing you're asked to make!
I became the person in the family who is asked to make the salads, especially Caesar salads.

My favorite salads when I'm not watching what I eat are seafood and pasta salads; otherwise I enjoy making a homemade salad with mixed greens (prefer arugula/spinach blend), cucumbers, cherry tomatoes, avocado, green peppers, chopped sweet Vidalia onions, walnuts, pecans or sunflower seeds, along with a fruit such as sliced strawberries, a mandarin orange, blackberries or chopped green apples. Sometimes I throw in a little flax seeds or chia seeds.

Being from the ancient south...LOL.....mustard or lemon juice were not part of the mix, so I'm sure that would make it very different in taste to me.

Passed down through the family, there were no grapes or nuts either, but over the years I have tried multiple styles and one of my favorites included halved grapes and chopped pecans. Yum yummy !

I liked seeing your "style"....

With the name of your post and then your announcing what you bought at market, at first I thought "is she going to put fish in it ??"....LOL... I'm glad you didn't. I would have been hard pressed to imagine that tasting good.

This is my favorite way of making a chicken salad! The grapes and walnuts add just the right touch! I can never get enough of this once I make it and will go back for a tiny spoonful more. I really love it!

Here is a hint that you may or may not want to try. Shred the chicken instead of chopping it up. When you shred it, there is more surface for the sauce to stick to, and it will stay in your sandwich better without falling out the sides as much.

I use two forks and it comes out perfect. I also do it warm and it parts like the Sea of Galilee.
