The Miracle of Wild Garlic

Stepping into the enchanting embrace of spring of 2023, verdant forests stretch as far as the eye can see, adorned with a carpet of wild garlic. A forager's paradise awaits, offering not only the joy of exploration but also a treasure trove of healthful benefits found in these humble green leaves.

My last post on wild garlic was 3 years ago, using it for a simple dish. I'd like to do a lot more posts on herbs, as I was inspired to get into herbs from various friends, but mainly through #naturalmedicine, #herbalhive and magnificent personalities like @riverflows, @tucklife-family and @samstonehill, who all inspired me to delve into so many other activities.

On my Journey with @aksu, we encounter amazing herbs and enjoyed herbal salads that literally made of rethink common entrenchment. How conventional salads can be really boring compared to the variety found in the wild, some considered as weeds.

Mindfully, we ventured into the forest, meticulously selecting each wild garlic leaf, ensuring that we'd get quality into our baskets, whilst leaving them to further grow close undisturbed. Back home, we embarked on the process of preserving their aromatic essence.

First, a thorough wash to cleanse them of any lingering forest remnants. Leaf by leaf, we examined them, ensuring their pristine quality. Placing them gently on a cloth, we allowed them to dry, patiently awaiting their transformation.

Next, the dehydrator became my ally, gently removing the moisture and intensifying the flavours locked within. As the wild garlic transformed into delicate flakes, my anticipation grew.

Holding a jar filled with Himalayan pink salt, I measured out the perfect ratio, filling it to around 2cm or one-fifth of its capacity. It was time to merge the worlds of savory and herbal delights.

The spice grinder whirred to life, skillfully reducing the dehydrated wild garlic to a fragrant powder. With utmost care, I poured this green elixir into the waiting jars, filling them to 75% of their capacity.

A moment of anticipation, a gentle shake, and the fusion was complete. The wild garlic salt was born. And oh, the culinary wonders it would unveil.

Delicious salads blessed with hint of wild garlic salt graced my table, each bite like a sparkle with the earthy freshness of spring. Adding buds of edible flowers can add to the fairy dust experience. My explorations didn't end there. Nettles, along with a various other herbs, followed suit, transforming them into the herbal salts that would give our dishes the extra twist.

I love wild garlic. It is amazing chopped into salads or made into pesto, yum.
I've never thought to dehydrate them, I also haven't had any growing near me for a few years now.
