Saludos a todos en la comunidad #hivefood, hace unos días recibí la invitación de @cochanet para participar en la iniciativa Mi plato favorito, creada por @janettyanez y que es este mes esta dedicado al pollo. Por eso después de pensar en las diferentes tipos de preparación de pollo, decidí hacer una receta que me encanta, la cual tiene la particularidad de usar una parte del pollo que no es muy común, porque la gente siempre come la pechuga, las alas o los muslos, olvidando que la molleja de pollo también es parte importante, les comparto entonces unas mollejas de pollo en salsa.

For this reason, after thinking about the different types of chicken preparation, I decided to make a recipe that I love, which has the particularity of using a part of the chicken that is not very common, because people always eat the breast, the wings or the thighs, forgetting that the chicken gizzard is also an important part, so I share with you some chicken gizzards in sauce.
Ingredientes/ Ingredients
- 720 gramos de mollejas de pollo
- 500 gramos de tomates
- 1 cebolla
- 1 rama de celery
- 1 rama de cebollín
- 1 rama de cilantro
- 3 dientes de ajo
- 3 ajíes dulces
- Aceite vegetal
- Sal o adobo y orégano al gusto.
- 720 grams of chicken gizzards
- 500 grams of tomatoes
- 1 onion
- 1 celery branch
- 1 sprig of chives
- 1 branch of coriander
- 3 garlic cloves
- 3 sweet peppers
- vegetable oil
- Salt or marinade and oregano to taste.
Paso 1 / Step 1
Clean the chicken gizzards and place them in the pressure cooker, add enough water to cover, add salt and oregano. Cook in the pressure cooker for an hour. Then remove from the heat, wait for it to cool down a bit and strain the water.
Paso 2 / Step 2
In a pot place the previously washed tomatoes, boil for 30 minutes or until the skin of the tomatoes comes off. Wait for it to cool down a bit and then blend. Pass the mixture through a strainer to discard the seeds. So you get only tomato juice.
Paso 3 / Step 3
Wash and chop the vegetables, that is, the onion, sweet peppers, chives, celery, cilantro, also peel and crush the garlic. Fry these with a drizzle of vegetable oil.
Paso 4 / Step 4
Add the chicken gizzards to the pan, add salt, and then add the tomato juice. Let cook over high heat for 45 minutes until the sauce thickens.
Resultado / Result
These chicken gizzards in tomato sauce are delicious, do not be afraid to try this part of the chicken, thanks to the previous cooking in the pressure cooker the gizzards are very soft, it also combines very well with the sauce, it can accompany this recipe with rice or pasta, or as in my country Venezuela, you can also fill an arepa with these sweetbreads and enjoy an excellent and nutritious meal.
